Baked Potato Soup

Excellent recipe that we made a few modifications to. We left the hot pepper sauce out to make it more kid friendly. We also directly added the cheese and bacon into the soup, adjusted the other ingredients a bit, and changed the steps to account for boiling raw potatoes... a combination of recommendations from others.

Original recipe yields 4 servings

  1. In a stock pot, bring chicken broth to a boil and add raw potatoes.
  2. In a large pan, cook bacon until crisp. Set bacon aside. Saute onion and garlic in the drippings until tender in the bacon drippings. Stir in flour, salt, basil and pepper; mix well.
  3. Gradually add onion mixture and crumbled bacon to the broth. Bring to boil; boil and stir for 2 minutes.
  4. Add the cheese and cream. Heat through but do not boil.
  5. Garnish with parsley.
