Turkey Enchiladas

Use canned enchilada sauce to reduce the preparation time in these turkey filled corn tortillas with olives, onions and two cheeses.

Original recipe yields 6 servings

  1. Saute Onions for a few minutes until tender
  2. Add Shredded Turkey, water and taco seasoning and cook for 30 min
  3. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
  4. In a small bowl, combine the cheese, sour cream, and chiles.
  5. Warm up tortillas in microwave with moist paper towels
  6. Drain Turkey and add to cheese mixture
  7. Pour enchilada sauce in bottom of dish to cover pan
  8. Add turkey and cheese mixture to center of tortilla, roll and place in the prepared dish. Repeat until bottom layer of pan is covered with enchiladas. Spread remaining sauce on top and sprinkle with remaining cheese mixture. Bake 20 minutes in the preheated oven, or until cheese is melted.
