With big, tender chunks of sausage and carrots, this meal-in-one has old-world flavor that will satisfy the heartiest of appetites. Serve over mashed potatoes.

  1. In a skillet, brown the sausage; transfer to a 5 qt slow cooker. Layer carrots and one can of sauerkraut. Reserve 1 tablespoon drippings in a skillet; saute onion and garlic until tender.
  2. Gradually add beer. Bring to a boil; stir to loosen browned bits. Stir in salt, pepper, caraway and hot pepper flakes. Pour over ingredients in slow cooker. Top with a can of sauerkraut. Cover and cook on low for 8-9 hours or until vegetables are tender.
