4 Cheese Crustless Quiche

This take on the crustless quiche is very rich and filling. I made it so that I could grab breakfast quickly each morning and wanted to stay within my low carb diet plan.

  1. Mix the eggs until well beaten on low speed for about 1 minute. Add the rest of the ingredients except the shredded cheese and beat on med-high for 4 minutes. Pour into a greased or pam-sprayed pan. Bake at 350 degrees for 45-50 minutes or until a knife inserted near the center comes out clean. Top with the shredded cheese, let it melt. Serve or use for breakfast the rest of the week.
