Weeknight Cheesecake


Adapted from another user's recipe to reduce calories and still make a delicious and easy cheesecake any night of the week. Of course, a homemade crust etc would taste better, who has that kind of time on a Tuesday?

  1. Sit cream cheese out to warm to room temperature.
  2. Preheat oven to 350 degrees F.
  3. Beat softened cream cheese slightly. Add eggs, sugar, vanilla, and zest. Beat until light and fluffy. Pour mixture into crust.
  4. (Optional) Drop fruit preserves onto top of cheesecake and swirl with a knife.
  5. Bake at 350 degrees F until firm, about 25 minutes. Refrigerate for at least 8 hours before serving.
