Spinach with Apples

Spinach is lightly cooked with garlic,and apple chunks in olive oil for a delicious side dish. Original has pine nuts...I don't like them and they are not budget friendly so I took them out (and reduce oil for health). Walnuts or almonds could work as an alternative to pine nuts, just toss some in with the garlic and apple.

  1. Heat the olive oil in a large skillet or wok over low heat. Add the garlic, and apple; cook until the nuts and garlic are golden and the apple is just soft, 3 to 5 minutes.
  2. Increase the heat to medium, and add the spinach to the skillet. Stir and cook another 2 to 3 minutes. Season with salt and pepper to taste.
