Brandy's Cheese and Bacon Frittata

This is an easy and yummy frittata that is sure to please everyone.

  1. Preheat oven to 350 degrees F.
  2. If using diced potatoes, bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 5 minutes. Drain and set aside to cool.
  3. In a large oven-proof skillet, cook bacon and onions over medium heat. After a minute or so, add potatoes. Stir occasionally until onions are soft and bacon is done.
  4. Stir in eggs, pepper and Lawry's salt. Cook until eggs are firm on the bottom, about 4-5 minutes. Top with American cheese cubes, being sure to press each piece into the egg mixture a little bit (to prevent it from browning in the oven). Top frittata with Cheddar cheese and place in preheated oven until cheese is melted and eggs are completely firm, about 15 minutes.
