Sugar-free, these are a great treat for those on a restricted diet. They are bland without the syrup, so plan on using it, or you can make your own fruit compote to top it.

  1. Cut up 2/3 cup butter and place in a 12 inch cast iron or hard anodized skillet inside oven and preheat oven to 425 degrees F.
  2. In a medium bowl, beat eggs with a whisk until light. Add milk and stir. Gradually whisk in flour, vanilla, cinnamon and salt.
  3. Peel and slice apple fairly thin.
  4. Remove skillet from oven and put apple slices in, and sprinkle with cinnamon. Pour all the batter in the skillet and return skillet to oven.
  5. Bake until puffed and lightly browned, about 15 to 20 minutes. Remove promptly, butter and serve with sugar-free maple syrup.
