Spicy Chipotle Grilled Shrimp

Marinated shrimp, grilled on skewers, have the fiery flavors of chipotle chilies, garlic, and red pepper flakes. This is for those who like their grilled shrimp spicy enough to break a sweat.

  1. Mix together the garlic, chipotle peppers, lemon juice, olive oil, paprika, cilantro, kosher salt, black pepper, red pepper flakes, and white pepper in a bowl. Stir in the shrimp, and mix well to thoroughly coat. Marinate for at least an hour in refrigerator.
  2. Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
  3. Remove the shrimp from the marinade, and save excess marinade. Thread about 5 shrimp per skewer, and grill on the preheated grill until the shrimp turn pink and opaque in the center, about 3-4 minutes per side. Baste with marinade while cooking and make sure you cook it after you have basted it, don't take it off right after basting.
