Glenn's Rhubarb Crumble

I modified this recipe with an extra 1/4 cup sugar. I also added a modifier so that you can make extra streusel into a crust. The crumble on the top is extremely delicious!

  1. Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch baking dish.
  2. In a large mixing bowl combine rhubarb, white sugar, cinnamon, egg and 2 tablespoons flour. Stir well and spread evenly into baking dish. Set aside.
  3. In a large mixing bowl combine brown sugar, oats, remaining 1/2 tsp cinnamon, and 1 1/2 cups flour. Stir well then cut in butter or margarine until mixture is crumbly. Sprinkle mixture over rhubarb layer.
  4. Bake in preheated oven for 40 minutes. Serve hot or cold.

Delicious! I love thus crumble - and the mounds of streusel that go with it!

This is a fantastic recipe. I doubled the recipe and put it in a larger glass baking dish. It was the best rhubarb crumble I have ever made! Would definitely recommend.
