Cream of Asparagus Soup


Fresh asparagus makes this wonderful creamy soup so good on a cold evening or as an addition to any recipe where you would need a creamy asparagus flavored base.

  1. Melt butter or margarine in a heavy cooking pot.
  2. Add onions and chopped celery; saute until tender, about 4 minutes.
  3. Either the can of condensed soup or make your roux now. Add 1 1/2 cups sauce (or the can of condensed soup), the broth and stir until smooth and bring to a easy boil.
  4. Then reduce heat to a simmer and add the sliced asparagus and simmer for about 20 minutes or until asparagus is fork tender.
  5. Stir in milk and pepper and then continue cooking until hot and well blended.
  6. Adjust seasonings to taste.
