Wilted Spinach Salad with Warm Bacon-Mustard Dressing

This is a classic wilted spinach salad with a wine twist. You'll love this warm bacon-mustard dressing. Simple, great recipe and parts can be done ahead if speed is a key factor. It will make your dinner guests feel special! This salad can easily be converted to a main dish salad by adding strips of grilled chicken breast.

  1. There are three cooking pieces. 1) Boil Eggs 2) Toast almonds 3) Fry bacon/cookup dressing.
  2. This a simple recipe but you'll be cooking several items to make it all come together at once, or you can prepare two items, toasted almonds and hard boiled eggs ahead of time and have thme ready to mix at prep time.
  3. Hard boil 2 to 3 eggs (your choice, depending on how well you like eggs),peel,cool, and slice set aside.
  4. Toast Almonds in tbls. of olive oil, set aside.
  5. Cook 4-5 slices of bacon (over high heat) until very crispy, remove, drain well on a paper towel.
  6. Pour off all but a couple of tablespoons of bacon drippings and (reserve,when cool refrigerate for future use)reduce heat to medium add in shallots and garlic, and cook until softened and translucent, about 2 minutes.
  7. Whisk in the white wine an bring back to a boil cook 1-2 minutes then add the, Dijon mustard, honey, and white wine vinegar bring back to boil, remove from heat.
  8. Pour hot dressing over the spinach add 2 crumbled strips of bacon; toss well, season to taste with salt and pepper.
  9. If your serving individual plates now top each with the egg and almonds. If family syle add and toss in the bowl.
