  1. Mix all ingredients together in a 4 quart microwave-safe bowl. Cook on high for 12 to 15 minutes, stirring once. Serve, sprinkled with brown sugar and pecans, if desired.
  2. If making on stovetop, bring milk to a boil, stir in oats and pumpkin. Cook for 5 minutes over medium heat, stirring regularly. Add spices, salt and sugar. Cook another minute.
  3. Remove from heat. Stir in 1 tsp of vanilla extract, if desired.
