My Yorkshire Mother and Auntie's would not approve of this at all BUT is has never failed me. The use of the light flour and skim milk helps them rise. This is great for high altitudes.

  1. Mix flour and salt together. In seperate bowl mix milk, eggs and cooled melted butter. Pour egg mixture into flour mixture and stir until smooth.
  2. Spray muffin tins with non stick cooking spray. Fill muffin tins 3/4 full.
  3. In a cold oven put oven rack on lower to middle shelf. COLD OVEN
  4. Place filled muffin tins into the cold oven. Turn oven on to 425.
  5. Bake without opening the oven door until they are crisp and tender 25 - 35 minutes.
