The Old Fashioned Coconut Cream Pie recipe seemed to be a real hit, but there were changes that almost everyone to a person made. This version of the recipe incorporates the changes that everyone agreed made it an awesome coconut cream pie. The first time I made this pie, I incorporated these changes and the pie turned out beyond awesome!

Original recipe yields 8 servings

  1. In a large bowl, combine half-and-half, coconut milk, eggs, sugar, corn starch and salt. Heat in microwave, stirring each minute, until a custard consistency is achieved. Stir in 3/4 cup of the coconut and the vanilla extract. Pour into pie shell and chill 2 to 4 hours, or until firm.
  2. Top with whipped topping, and with remaining 1/4 cup of toasted coconut.
  3. Note: To toast coconut, spread it in an ungreased pan and bake in a 350 degree F (175 degrees C) oven for 5 to 7 minutes, or until golden brown, stirring occasionally.
