Fruit Salsa and Cinnamon Chips

Delicious salsa made with fresh kiwis, apples and berries,served on homemade cinnamon tortilla chips.

  1. In a large bowl, thoroughly mix kiwis, raspberries, strawberries, white sugar, brown sugar and fruit preserves. (Save apples in lemon water until just before serving.) Cover and chill in the refrigerator at least 15 minutes.
  2. Preheat oven to 350 degrees F (175 degrees C).
  3. Coat each side of 4 flour tortillas with butter flavored cooking spray. Sprinkle liberally with cinnamon mixture. Stack and cut into wedges with pizza cutter. Arrange in a single layer on a large baking sheet. Spray again with cooking spray.
  4. Bake in the preheated oven 8 to 10 minutes; chips will get crispier as they cool. Allow to cool approximately 15 minutes. Serve with chilled fruit mixture.

Had this when a friend brought it to our get together... not sure why no one has yet rated it, but it was AMAZING and a huge hit at the party! I even made it myself a couple days later because...

Excellent and refreshing. Making the cinnamon chips are a bit tedious but otherwise really easy. I use whatever fruit is in my fridge plus I like to add peaches to give it a nice summer feel.
