I've lived in the philadelphia area for over 40 years Some of the best steaks were from street vender trucks. This is how I've seen them do it at most places. Some places don't shed and chop meat, but I prefer this method. I prefer Provolone

Original recipe yields 4 servings

  1. Usually done on large grills, but good results can be had with x-large frying pan.
  2. Have all ingredients room temp and ready to cook.
  3. Heat preferably griddle/flat grill or heavy x-large non-stick frying pan on med-high to high heat
  4. Add oil, onions, mushrooms and peppers and saute 5 min.
  5. Add chipped beef to pan, season with salt, pepper, onion and garlic powders
  6. IMPORTANT! With two spatulas, shred meat as it cooks flipping and shredding on high heat
  7. When meat is not pink anymore, and liquids are mostly boiled away spread mixture evenly in pan and cover with cheese.
  8. Cover with lid and lower heat, just till cheese starts to melt.
  9. Divide between the 4 rolls, and serve with ketchup and hot Italian oil peppers.
