Timbo's Broccoli and Cheese Brunch Casserole


I doubled the broccoli and used fresh,substituted pre-cooked summer sausage for italian sausage and reduced amount, used only 1 cup cheddar cheese, used skim milk and substituted cottage cheese for ricotta. No tomato and no salt. I love my relatives and friends but they tend to salt by habit not taste.

  1. 1)Preheat oven to 350 degrees F (175 degrees C).
  2. 2)Lightly grease a 9 x 13 inch baking dish.
  3. 3)saute broccoli in olive oil to desired (will not cook much in oven)doneness
  4. 4)In a bowl, mix diced sausage, sauted broccoli, and 1/2 cup Cheddar cheese.
  5. 5)In a separate bowl, mix 1/2 cup Cheddar cheese, cottage cheese, eggs, milk and pepper.
  6. 6)Spoon the sausage mixture into the prepared baking dish.
  7. 7)Spread the Cheddar and cottage mixture over the sausage mixture.
  8. 8)Cover with aluminum foil, and bake 30 minutes in the preheated oven. Uncover, and bake for an additional 15 minutes. Let stand for 10 minutes before serving.
