Wild Rice Chicken Salad with Grapes

A pretty and delicious salad It's fancy enough for a shower or tea party but wonderful any time!Can be served as a light main course with a nice dinner roll, lunch or dinner. Great for taking to a pot lucks, too. Left over chicken or rotissie chicken can be uused. All white meat can be used, if you prefer.

  1. In a large bowl, combine the chicken, rice, water chestnuts, carrot and s shallots. In a small bowl, combine the mayonnaise, sour cream, salt, pepper and parsley flakes . Pour over chicken mixture; toss to coat. Cover and refrigerate for 2-3 hours. Just before serving, genly fold in the grapes. Line a pretty platter with sliced romaine lrttuce. Pile the salad attractively on the romain. Sprinkle on the cashews.
