Chefjohn's Breakfast Potatoes

This is a great recipe for breakfast potatoes, as a side dish or the start of a hash. Very healthy as they are cooked in olive oil and not butter.

  1. Heat large skillet on medium heat, cut potatoes in half lengthwise and slice across the grain about 1/4 inch. Add to the hot oil and fry until brown on one side. Slide them around in the pan enough to turn them over and add onion and garlic. Cook until crispy adding more oil as needed. Turn off heat, stir well with salt and pepper and onion salt.
