Healthier Marie's Easy Slow Cooker Pot Roast

Moist and juicy pot roast done in a slow cooker, made healthier with a little less meat and LOTS of fresh veggetables and seasonings.

  1. Season the chuck roast with salt and pepper to taste. Brown on all sides in a large skillet over high heat.
  2. Place in the slow cooker. Pour the broth into the skillet and deglaze. Simmer 2 minutes and pour broth into the slow cooker. Stir the onions into the slow cooker, cover and cook on low setting for 5 hours.
  3. Add the carrots, potatoes and celery. Cover and cook on low setting for 3 an additional hours. (Optional: stir in some fresh chopped parsley!)

This is a really good base recipe that you can tweak to suit your tastes. It smells heavenly while cooking. Will add more seasoning next time.

I didn't like the meat cut the recipe tells you to buy. The veggies tasted great but the beef was just too chunky and weird. I will not be making this again.
