  1. Preheat oven to 425 degrees F. Place hashbrowns in bottom of greased 7x11 pan and bake for 30 minutes. Reduce oven temp to 350 degrees F (175 degrees C).
  2. In a large bowl beat together eggs, milk, and sour cream. Mix in cheese, bacon, onion and green pepper. Pour mixture over the top of the baked hash browns.
  3. Cover with aluminum foil and bake in preheated oven for 45 minutes. Uncover and bake for another 30 minutes until eggs have set (if refrigerated overnight will need to adjust the 2nd half bake time to maybe an hour).
