A perfect hearty soup for a cold fall/winter night! Beyond the usual prep time, this is fairly easy to throw together. It's also simple enough to sub ingredients or use up what you have on hand. I used 6-7 cups of water and added a combo of Better Than Bouillion beef and chicken bases. Used Johnsonville 1/2 pork 1/2 chicken sausage, shaped into tiny meatballs, which is FANTASTIC in flavor and also because there isn't any grease to drain or skim. Doubled up on basil since oregano isn't a family favorite, and also seasoned the broth with onion and garlic powders as well as a good dose of black pepper. Used a good quality garnacha wine and used slightly more than 1/2 cup. Used 1 can of fire roasted tomatoes as well as a roughly-chopped roma tomato, and even added in a handful of grape tomatoes that I wanted to use up. No zucchini on hand, so I tossed in some fresh spinach, a 20oz package of a 3-cheese tortellini, and simmered to perfection. Leftovers tonight were also great...just added some hot water to reheat. I like to add crushed roasted garlic bagel crisps to my bowl, but garlic bread is a superb side, as well as a great way to sop up the deliciousness!
