This absolutely hit the spot tonight, thanks for submitting this recipe. I am having a hard time putting down the bowl, it's THAT tasty and yes, I am eating it as we speak. I only had turkey bacon on hand because it's what I prefer...so I was a little worried it wouldn't produce enough grease for this dish. (Turkey bacon does not produce nearly the amount of grease that regular bacon produces.) I cooked an entire package of turkey bacon and got, maybe, 2 1/2 tablespoons of grease. I also added a couple dashes of sesame oil. Together, it was the perfect amount of grease to fry the remaining ingredients, and I think sesame oil really does something for cabbage. It's pricey but tasty & worth having it on hand for dishes like this. I did not simmer this for the suggested hour because it was done and ready to be served half way through cooking. I agree with another reviewer that I prefer my cabbage to be on the firmer side. Needless to say, this dish was absolutely wonderful and I look forward to making it again. (By the way, I did not put the entire package of turkey bacon into the dish, lol. I cooked all of it for the grease because I knew just 6 slices wouldn't make the cut.)
