Sweet Potato Pie I

Really great pie! I never got the knife to come out clean but my father in law, who is a baker, told me that I can just "jiggle" it and see if it all moves as a unit. Then it's good to go! Thanks for the recipe!

Bruschetta Chicken Bake

Pretty good flavor. I added a bit more seasonings because we like a lot of flavor. I thought the recipe could use more chicken but otherwise it was pretty tasty, quick and easy! Even my picky son ate it, and anything he'll eat is a keeper!

Steak and Kidney Pie I

I soaked the kidney in milk overnight,cut into pieces. I did lightly flour then sauteed the kidney and steak in olive oil. Caramelized some onions and then made a gravy. I did not have puff pastry so left it out. Served this over rice. It was delicious.

Better Than Fruitcake Cookies

These had a very nice fruit cake taste. They flattened out more than I would have liked, but perhaps I cut it too thin. Because they turned out thin, they had a nice crispiness. Flavor excellent. I would definitely try again.

Sticky Buns II

I attempted this recipe and the dough came out more like batter because the measurements are off from dry to wet ratio. The second attempt faired better. I added all the written ingredients and added only 1/2 cup of milk. The dough wasn't too sticky and was able to be rolled out by my pin after lightly dusting my counter top. I made the interior glaze and was very curious about putting brown sugar in the center rather than white sugar in usual recipes. So, in the oven they went, at the alloted baking time and temp. Twenty five minutes later the buns were done. They look right and smelled great. Well, taste testing time. The texture the the dough was good, a little dry like another review stated and the dough had no flavor and was a little doughy tasting. And they weren't sticky. So, there is going to be a third attempt. And I plan to add vanilla flavoring, orange peel grated shavings and more butter to the dough mixture with the same ingredients with the altered milk measurement and the center sugar glaze will consist of white sugar (instead of brown sugar),butter and cinnamon. These buns need icing! I've tried other icing recipes and confectioners sugar and milk taste too much like perfume essence. So for these buns I recommend a cream cheese icing.

White Chip Orange Cookies

Swanson® Ultra Creamy Mashed Potatoes

I thought these mashed potatoes were okay, but the after taste of the broth was a little strange to me. It does add a different flavor, but I didn't feel it was GREAT. Also, I did have to explain to everyone that I used the broth to cook the potatoes since they ALL noticed the aftertaste. I would say these potatoes are a matter of preference.

Moist and Savory Stuffing

This recipe was very similar to a family recipe I use every year, so I decided to add the chicken broth rather than the family's traditional water. A few tips to get more taste from this: add poultry seasoning (at least 2 teaspoons or to taste - I use 1 TBSP with one bag of the herb stuffing)and add salt to taste. You may want more than a "generous dash" of pepper as well. This DOES need more added to it. I have never found Pepperidge Farm Herb Stuffing to have enough herbs in it to flavor stuffing. You will need to add more to it to get a good flavor. The difference between this stuffing and the family one is the amounts of onion and celery. The family stuffing also tends to not be dry and cooked in the bird (which is brined) for additional flavor.

Pumpkin Ginger Cupcakes

These cupcakes were excellent! I got rave reviews from my family and friends, and they couldn't believe they tasted good w/o all the "real" sugar. I used wheat flour instead of white all-purpose flour, 1/2 c butter + 1/2 c applesauce instead of all butter, Truvia sweetener instead of sugar, Splenda brown sugar blend instead of brown sugar, and 3 eggs instead of 4 eggs. Use crystallized ginger -- it really makes all the difference in the taste. I will be making these again! Oh, and use the Cream Cheese Frosting II recipe!
