Hummingbird Cake I

Having only eaten Hummingbird cake once I was eager to try to make it myself. I made a few minor adjusments as well. I used only 1 cup of canola/veg blend oil, 2tsp. Of Madagascar vanilla, cinnamon, a little nutmeg, and allspice. I could only find 15.5 oz. cans of crushed pineapple. I used 3/4 of the can. I mashed 4 very ripe bananas. I used a Kitchen Aid mixer on the lowest speed blending the eggs first, adding the wet ingredients before the dry. I made cupcakes. The batter yielded about 26 cupcakes. They cake was very moist. I would cut back the oil a little more the next time around.

Slow Cooker Pulled Pork

Absolutely delicious! I used pork loin. I followed the recipe as far ingredients, but cooked in pressure cooker rather than slow cooker, because I like the way the pressure cooker infuses the flavors. The meat was 'melt in your mouth' tender and had a delicious flavor. Will definitely make again. Used the Restaurant Coleslaw from this site....that was awesome also. Great combo!

Pumpkin Spice Martini

This is a great drink. Not too heavy at all. We used inexpensive brand liquors and the drink was very nice. My friend and I are wine enthusiast and seldom drink anything else. We will make this again and no changes needed. Happy belated Thanksgiving!

World's Best Lasagna

I have to say this is the BEST Lasagna I ever tasted! I've never really cared for it, but after making this recipe, I'm sold. This my first time actually making lasagna and it was a total success and the sauce is so delish I could eat it all by itself! Thank you for posting this recipe! Love it!!

Kickin' Collard Greens

The best collard greens ever! (sorry grandma). I could never figure out how to get my collards to taste like my grandmother's so I decided to look for something else. Stumbled across this recipe, cooked it exactly as directed (except I added lots of bacon). I let it slow cooked all day in a crock pot and it was the best. I made it for my aunt's b-day cookout party and they loved it! There was none left over! Thank you thank you thank you ken so much!

Sausage Potato Soup

This was very tasty. The zuppa toscana soup at Olive Garden is my all time favorite so I was more than excited to try this one out. I took the advice of another recipe and added bacon and garlic. I also diced up 3 large potatoes instead of using frozen. I never really favored the kale so I used fresh spinach instead. Turned out great! Definitely one of my favorites! UPDATE: I do prefer the kale over the spinach I just use a little less kale than called for. Still so delicious! Also be very particular about what sausage you use because it makes all the difference in the flavor. I learned that the hard way. The first two times I loved the soup. when I made it again I used an off-brand that was on sale, I really did not like the outcome of the soup. Then I made it again with the same sausages I used the first two times and it was delicious

Oyakodon (Japanese Chicken and Egg Rice Bowl)

The real deal! A friend who grew up in japan recently made this for me. This recipe tasted excactly like his! I personally like it more soupy, so i doubled everything except for the chicken, onion, and egg.

West African Peanut Soup

I just finished cooking, and my family keeps sneaking a cup here and there---they love it! I didn't alter much---though I saved the red pepper for people to add individually ( I have little ones that aren't crazy about it), and was surprised it thickened up like it did. Definitely saving! Autumn Muffins

Perfect names for these muffins! Lovely treat on this chilly fall day. I made several changes based on ingredient availability and preference. I left out the hazelnuts, substituted dried cherries and dates for the cranberries and figs, used half whole wheat and half all purpose flour, plain yogurt for half the butter, and blue agave for half the sugar.

Bologna Salad Sandwich Spread I

My Mom made a version of this back in the 50's but she would use Vienna sausages instead of baloney. I made this for my kids and grandkids and will try it on my great grands when they get older.

Polish Meat and Potatoes

After learning the first time around, we elected to pan fry the meat separately from the rest of the meal. Then add once the potatoes are ready. This will avoid over cooking the potatoes with the lid on which will soften the potatoes too much.
