Bacon-Wrapped Pork Chops With Seasoned Butter

Reviewed: Jan. 31, 2012
I made these for dinner tonight my whole family enjoyed this. I did mine under the broiler and my bacon turned out perfect. I seasoned the pork chops with Kosher salt, pepper, a little adobo seasoning and with Grill Mates Montreal Steak. To the butter topping I added some chopped fresh parsley. I served this delightful pork chop with risotto and steamed vegetables.

Chicken, Spinach, Blue Cheese and Bacon casserole

Reviewed: Jan. 27, 2012
This was very good. I didn't change too much but was too lazy to stuff each breast individually. Instead I cooked the bacon in a skillet, drained off most of the grease and then browned the breasts. In another skillet I sauted onions, garlic, spinach, salt and pepper and parm cheese. Then I spread the spinach mix into a casserole dish, topped it with the chicken and sprinkled the bacon and the blue cheese on top. Baked until bubbly...very tasty!

Mexican Blackened Corn

Reviewed: Jan. 15, 2012
Made this side with margarita chicken and black beans. (Picture will be posted.) I used three cans of sweet corn, rinsed thoroughly, 1/2 a red bell pepper, 1/2 red onion, garlic and Budweiser beer. I didn't measure much of anything, and threw it together to taste. Turned out pretty good that way. I also did not use any cheese or bacon, only cilantro. We loved it.

Potato Soup

Reviewed: Jan. 4, 2012
This is a great "base" for Potato Soup! I added a tsp. of minced garlic to the onion and since I didn't have mashed potatoes I added cubed Red Potatoes that I already had boiled for 8 minutes, I added them to the onion & garlic mixture with a half cup of chicken broth and let them cook for 10 minutes. This allowed me to mash some of the potatoes in the pot which made my soup thicker. I used the amounts listed for the broth and milk and my soup wasn't runny/thin it was perfect consistancy. I also added 2/3 cup of chopped cooked ham, 1 tsp. of sea salt, 1/2 tsp of Basil, 1/2 tsp of Pepper and 1 tsp of Parsley. I topped each bowl with a spoonful of Kraft 2% shredded Mexican cheese blend - turned out to be a really good soup! I will definately make this again.

Refreshing Limoncello Cake

Reviewed: Jan. 1, 2012
I made this recipe as cupcakes with a few adjustments. I used sour cream instead of plain yogurt. I added a teaspoon of Madagascar Vanilla extract. The Caravella Limoncello seems to be more sweet than tart and sort of gets lost in the batter. So, I added extra zest and omitted the lemon extract. I made a frosting using pureed fresh strawberries. I added Limoncello to the frosting. I also filled the cupcakes with lemon filling and limoncello mixed in. Cupcakes were great with a nice lemon smell.

Hummingbird Cake I

Reviewed: Dec. 6, 2011
Having only eaten Hummingbird cake once I was eager to try to make it myself. I made a few minor adjusments as well. I used only 1 cup of canola/veg blend oil, 2tsp. Of Madagascar vanilla, cinnamon, a little nutmeg, and allspice. I could only find 15.5 oz. cans of crushed pineapple. I used 3/4 of the can. I mashed 4 very ripe bananas. I used a Kitchen Aid mixer on the lowest speed blending the eggs first, adding the wet ingredients before the dry. I made cupcakes. The batter yielded about 26 cupcakes. They cake was very moist. I would cut back the oil a little more the next time around.

Slow Cooker Pulled Pork

Reviewed: Dec. 5, 2011
Absolutely delicious! I used pork loin. I followed the recipe as far ingredients, but cooked in pressure cooker rather than slow cooker, because I like the way the pressure cooker infuses the flavors. The meat was 'melt in your mouth' tender and had a delicious flavor. Will definitely make again. Used the Restaurant Coleslaw from this site....that was awesome also. Great combo!

Pumpkin Spice Martini

This is a great drink. Not too heavy at all. We used inexpensive brand liquors and the drink was very nice. My friend and I are wine enthusiast and seldom drink anything else. We will make this again and no changes needed. Happy belated Thanksgiving!

Kickin' Collard Greens

Reviewed: Oct. 19, 2011
The best collard greens ever! (sorry grandma). I could never figure out how to get my collards to taste like my grandmother's so I decided to look for something else. Stumbled across this recipe, cooked it exactly as directed (except I added lots of bacon). I let it slow cooked all day in a crock pot and it was the best. I made it for my aunt's b-day cookout party and they loved it! There was none left over! Thank you thank you thank you ken so much!
