Good Old Fashioned Pancakes

Reviewed: May 3, 2009
First reviewed these great pancakes in '09, but made them this morning with a twist from Diners, DriveIns & Dives that I want to share. After letting them cook a bit on the first side, add crumbled bacon and/or scrambled sausage on the uncooked side, then flip and finish cooking! Delish!

The Best Rolled Sugar Cookies

Reviewed: Dec. 22, 2008
Do NOT use self-rising flour. I made this mistake and my cookies spread out too much and wouldn't hold their shape. They tasted great though. I will be trying this again using all purpose flour as the recipe calls for.

Tasty Lentil Tacos

Reviewed: Dec. 14, 2008
Really yummy! I didn't miss the beef. Instead of mashing the beans, I put half the mixture in the blender and pulsed it a few times. Then I mixed the bean mixtures together and added the salsa.

Baked Potato Soup

Reviewed: Dec. 1, 2008
I was a little hesitant to make this because of the chicken broth & bacon drippings. My traditional potato soup recipe does not use either and is delicious. I decided to try this recipe to try something different. The bacon drippings and chicken broth do not add to the soup. I felt it made the soup too salty and gave it a processed taste. And I used low salt broth! The drippings also taint the creamy color of the soup, giving it the old brown look. My advice, just top traditional potato soup with turkey bacon, chives and cheese. Skip the bacon dripping.. it's just grease, crumble bacon for flavor!

Wonderful Banana Cake

Reviewed: Nov. 28, 2008
A great way to jazz up yellow cake mix. I used 3 ripe bananas. I also substituted apple sauce instead of oil in the cake mix. After the cake cooled completely, I topped with a mixture of: 1 cup milk, instant banana cream pudding and 1/2 tub of cool whip. Topped with walnuts. My boyfriend said this is his new favorite.

Alyson's Broccoli Salad

Reviewed: Nov. 26, 2008
This is a great recipe. I used less mayo, grapes instead of raisins & turkey bacon. DELICIOUS. One tip: slowly add the mayo/sugar/vinegar mixture. You may not need as much as called for. I think it depends on how big your broccoli head is. So be careful. Adding too much would make it a soggy mess.

White Bean 'n' Ham Soup

Reviewed: Nov. 6, 2008
I searched for a quick and easy bean soup recipe that would be full of flavor--this one topped the charts!!!! My entire family loved it and I took some to my in-laws and they thought it was from scratch. It was very easy to make and not time consuming. Excellent flavor and hearty.

Perfect canvas to tweak with toppings. I added sour cream, turkey bacon bits and sliced chives. I also cut the potato in half and made "boats". Or potato skins =)

Russian Mushroom and Potato Soup

Reviewed: Sep. 23, 2008
I like this recipe. As is I give the recipe 4 out of 5 stars. It was very delicious, but I think next time I will tweak it. I would add less salt, less flour, more carrots and leeks. Maybe less mushrooms. I love mushrooms, but my boyfriend said it was WAY to much for his taste.

Flourless Chocolate Cake I

Reviewed: Sep. 7, 2008
It is so good to have something delicious to eat without worrying about gluten!! This recipe is WONDERFUL! I used choc. chips and 4 sq. unsweetened choc. I tried using orange juice to replace the water but you couldn't tell it. I served it with lactose free vanilla ice cream. It messes up alot of dishes preparing it but it was fairly simple to do. This was my first time using a springform pan so I was a little nervous but I did as other viewers said. Line bottom with parchment paper, spray with pam, wrap foil around the outside. No water leaked in and no cake leaked out!! It came out beautifully. Next time I think I'll try a raspberry sauce to cut the sweet a little.

This was delicious, quick, easy & healthy! The sauce would be great in a stir fry as well, chicken, sugar snaps, onions and even some red pepper for spice and heat. My family was totally impressed with the taste.
