My husband is a super, super picky eater and he loved this dish - he gets weirded out by textures and flavors -- doesn't like things over seasoned or bland. I used chicken breast tenderloins and found that after browning the meat in the pan I only needed to bake it for just over 20 minutes -- the meat came out very tender and juicy. If you hate dry meat this is a great recipe to try. I removed the stems from my mushrooms to avoid any tough texture and sliced them ultra thin -- and I used shredded cheese instead of sliced. It came out great. I served it with rice pilaf and steamed veggies. Husband liked it so much he asked me to make it again next week.
