we love this recipe, and make it weekly. a few changes based on reviews: soften butter, dont melt it. beat butter with sugar until creamy. i use 1/2 c white and 1/2 c brown sugar. 1 tsp lemon juice at the same time as the vanilla. add 1 tsp baking powder with the baking soda, and add 1 tsp cinnamon. mash the bananas, dont just slice them.
have substituted buttermilk and whipping cream for the sour cream, and both worked fine. yogurt would probably work as well.
i usually double the batch and make half in a loaf pan and half into 24 muffins. (without liners.) i freeze the muffins, and reheat them as needed. they take about 17 minutes.
