Chicken Chimichangas with Green Sauce

This was sooo yummy. I halved the recipe and used black sliced olives(6 oz can). I did not pured the olives with the rest of the liquids, however. I didn't have taco seasoning, so used a Santa Fe spice I had in my rack. I really reduced the amount of cheese. I added a handful in with the cream cheese and just sprinkled a little over the chimis at the end. There is so much cheesyness with the cream cheese, that a little cheese goes a long way. I used mexican taco cheese for my cheese. We loved it and it was a very simple dish to fix. Oh, I also baked instead of fried...sprayed with Pam and cooked for 10 minutes on one side, flipped, sprayed the other side and baked for an additional 10 minutes. They were not as crispy as deep fried, but crispy enough and I enjoyed them more than if they had been fried in oil.

Awesome Broccoli Casserole

Didn't have cream of broccoli soup, so used broccoli cheese soup instead and then omitted the shredded cheddar cheese. Also didn't put in a whole package of stuffing mix. Instead I added a cup of stuffing cubes. Cooked the frozen broccoli first. It was a very good vegetable casserole. I know I am rating it on the changes I made, but since I didn't fix it as written, I have to rate it on how good it was. I will keep the recipe for sure and maybe try it as written the next time

Chicken Veracruz

Both my husband and I thought this was wonderful. No one flavor dominated the dish. It all melded and worked together. I fixed as written except for omitting the cilantro as we don't like the flavor. I also did not add more oil in the sauce in order to cut fat and I don't think the omission did any harm. Thanks for the recipe.

Apple Raisin French Toast Strata

This was a hit with everyone Christmas morning. It needed a lot longer to cook and I ended up increasing the oven temperature and just blasting it with heat. I think baking for an hour to start with.

Sun-Dried Tomato Hummus

Aw-some Cole Slaw

Slow-Cooker Lasagne

Wasn't sure how this would turn out but it was fantastic! Used low fat cottage cheese instead of ricotta and couldn't tell the difference. Added 2 links of italian sausage , squeezed out of the casing and broken up in the pan and 1 T minced garlic. Actually used about 8 noodles and used the full cup of water, cooked on low for 3.5 hours, topped with remaining cheese and cooked another 30 minutes. It was perfect.

Pat's Baked Potato Salad

Fixed as written except used shredded cheese instead of cubed. The addition of the relish and olives give it a sweet/salty dimension that is a nice touch. Will keep in the rotation

Cinnamon Roasted Sweet Potatoes

Fluffy Hot Chocolate

I LOVE this cocoa! My family all rated it "five stars!" I did add more sugar though (some comments said it wasn't sweet enough) and used cinnamon instead of vanilla.

Tomato Soup I

This is SO easy to make and it also makes a good snack or put in a cup to have as a hot drink. I always puree it before I stir the hot milk in. And add basil.

Broccoli Barley Soup

Used 3 15oz cans tomatoes, 5 cloves garlic, minced. Sauteed onions and garlic in broth before adding to crockpot. Used chicken broth and juice of one whole lemon. Cooked in slow cooker on high for 4 hours.
