Gnocchi with Cherry Tomato Sauce

not too bad - easy and tasty. I used yellow grape tomatoes (which were super sweet). I agree with Michelle - the olives really make it.

Balsamic Brussels Sprouts

Sombrero Chicken

This was the best! Oh my gosh! I have to share that I had to cook it in the oven, because we just moved and no pans yet! lol! I cooked the bacon in the morning and did not use any bacon drippings...you don't need it! So I took a 9 x 13 casserole dish...put the bacon on the bottom, layered with green pepper and onion, and half of the cilantro. I seasoned the chicken (chicken thighs, cheaper than breasts) as instructed, then just put it on top of everything else. When the chicken was almost done, I threw on a can of diced tomatoes, and let it cook a little longer. I started the oven at 375, then jumped it up to 400 degrees. I don't remember the total time...just checked until the chicken looked done. One other thing I did was I made my own fajita seasoning....easy and tasty. Then we just put the cheese and the rest of the cilantro on our fajitas as we assembled them. I think the cilantro is the key to this. You will love it!

Impossibly Easy Ham and Asparagus Pie

Very very good! I made it exactly as written except for omitting the ham. It would be very easy to substitute various veggies and meats but it was great with just the swiss cheese and asparagus. It did take a bit longer to bake, but was super easy and I'm glad it made a large pan so I have leftovers!

Sweet Dinner Rolls

Absolutely delicious!! Took to family dinner and there were two other large pans of rolls that another relative brought; I brought one pan of these rolls as I was just testing them out....told them they were all my guinea pigs =) Well lets just say the other relative still had over a full pan left and I had 4 little rolls left haha. Guess they liked them. I made this recipe again except this time after the kneading process in the bread machine, I took the dough out and coated in oil and covered until it was doubled. I punched the dough down and divided it in half. Put each half in an 8 x 4 greased and floured pan. Covered and let it rise until double in size again. Baked in 350 degree oven for about 20-22 minutes. Rubbed a stick of butter over top and sides of loaves for a glossy tender crust. YUM!!!! Came out perfect!! One loaf is almost gone already in a matter of a few hours. Will be making over and over.

Simple Greek Couscous

Pretty good and very easy. I used whole wheat couscous, and didn't have sundried tomatoes (although i'm sure they would be awesome in this recipe). I just used some fresh tomato, and then added oregano and basil, along with a little EVOO. Will definitely be making this fast dish again.

Cranberry Orange Bread

This was pretty good - definitely super moist (almost too much so). I substituted one cup of whole wheat flour, used vanilla fat free greek yogurt in place of the sour cream. Next time I might try to substitude applesauce for half the butter, or just cut the butter down a bit. The can of oranges I opened were huge slices, so I cut them into each into three pieces. Next time, I might add nuts, or some type of crumb topping.

Sausage and Vegetable Risotto

This was great - although next time I definitely won't use the added oil - the sausage was plenty greasy to cook the onions. Also didn't have arborio rice so used brown instead, knowing it wouldn't get to the creamy consistency of risotto, but that was ok. Still turned out to be a great meal (even with canned asparagus since I didn't have fresh)l.

Blue Cheese Burgers

Very good! Only change I made was adding about 1 tsp minced garlic and a thick slice of bacon on top. Also its very cold here so I could not grill, left a little of the bacon grease in the pan and cooked burgers in hot skillet for about three minutes each side. Left them very moist and oh so yummy. Thanks for the recipe!

Parmesan Brussels Sprouts

We made this as a really fast side dish. Didn't have parmesan but subbed asiago as anothe reviewer recommended and it was very good. Didn't use nearly as much butter as it called for (about 1/3). Added a few TB of water to help steam the sprouts. Will definitely make again.

Max & Erma's Tortilla Soup
