Western Asia

Encompassing a handful of countries including Iraq, Jordan, and Saudi Arabia, the cuisine of West Asia is most easily described as Middle Eastern. And, although the region's food is as rich and diverse as each country's history, ingredients such as chickpeas, parsley, honey, and sumac are commonly used across West Asia. Throughout the region, it is common for meals to begin with mezze, a lavish spread of appetizers most often compared to Spanish tapas. Although dishes vary by location, typical mezze include the eggplant dip baba ghanouj, hummus, and the delicious pita salad, called fattoush. Not surprisingly, almost every country in the region has its own culinary specialty. In Jordan, the national dish is mansaf, a seasoned lamb cooked in dried yogurt. Shuwa, a favorite delicacy in Oman, is made of lamb that's been cooked for up to two days in an underground oven.
