Hand Held Hashbrown Casseroles
We loved this! I did double the eggs and cheese...8 eggs and 2 cups of cheese. Omitted the butter and ham. Used frozen diced peppers and added to the sausage along with a Tbs of dried minced onion. The bob evans sausage cooked up really lean so I didn't need to drain it...they were just moist enough with out the added butter. Made 1/2 in muffin cups and 1/2 in mini muffin cups - filled the cups to the top. Our guests asked for the recipe! This will be my go to breakfast for when we have house guests!

Beef Noodle Shepherd's Pie
My husband was really skeptical, this is not real shepherds pie, but he loved it. I halved the recipe for two but needed to add a little more water to cook the macaroni. I used homemade onion soup mix from this site (easy to half) and also added a little milk and cornstarch to thicken it up before baking it. I made homemade mashed potato's using 3 and it all fit really well in my small round corningware dish. Topped with a bit of cheese too. NO LEFT OVERS :)

Cheesy Ranch Potato Bake
Love it! I use about 1/2 stick of butter and I don't add it until I add the cheese and dressing. I use kraft dressing and seasoned salt instead of regular salt. The potatoes are super soft after 1 hour, and I cube them 1/2 inch or so. I top with a bit of cheese and broil to brown. YUMMY!!
