Buttermilk Pancakes with Vanilla and Nutmeg

I am the author of this recipe. This is a reprint of my recipe. The original recipe page had my photograph. This page did not have my photograph, and it was so long ago I had to download from my old recipe page. I now eat gluten free and dairy free. I have done many versions of pancakes with my diet restrictions. All are based on my original recipe here.

Microwave Baked Apples

Tasty! I microwaved each apple in a glass container that fit one apple, and was tall enough to cover loosely with plastic wrap. I microwaved both apples, at the same time, rotating the containers after one minute, for 3 minutes. Then I pulled the containers out to sit for five minutes, did another 2 minutes in the microwave, then took them out to sit for 10 minutes. I had peeled the granny smith apples halfway down to make eating the apples easier at the start.

Creamy Jasmine and Rice Milk Rice Pudding

I had and used: Jasmine rice, Rice Milk, regular raisins, picked free of stems, soaked a minute and rinsed, and Earth Balance buttery sticks. I am gluten and dairy free, and I can eat eggs. My substitutions still came out DELICIOUS! I added the sugar just before adding the raisins, egg, and a bit more rice milk.

Creamy Rice Pudding

Creamed Chipped Beef On Toast

My mother called this "chipped beef on toast". I have made this for years, taking over from my mother making this for all of my life. We use the larger container of Carl Budding Beef, equal to about two little plastic bag packages, and cut the beef into bite-size strips. And we always add a drained can of green peas. We use fresh ground black pepper, although cayenne disappears in the cream sauce for for a better look. There is never any of this left over with three people eating it for a meal at my house. My mother had to feed five people, and we were always wanting more! We butter our toast before putting the chipped beef on top.

Sloppy Joes II

This is similar to the recipe I make. I use sweet pickle relish instead of green pepper. I do add a tablespoon of brown sugar even though the relish is sweet. To make this ready faster I squirt ketchup and mustard onto the hamburger, add the rest of the ingredients, and fry with medium heat, stirring constantly. To make the Joes a bit less messy, I shake up a teaspoon of flour or cornstarch in a 1/2 cup of water, stir enough of it into the hot mix in the frying pan to moisten, and continue cooking it until the water reduces and the flour or cornstarch are cooked. The hamburger mix is ready to eat at this point. I use any leftover Sloppy Joe mix in chili or spaghetti sauce: a quick way to make another meal.
