Egg and Cheese Puffs

This is one of those recipes that does NOT turn out right without modifications. Tastes great... Once you figure out how to actually change the ratio and properly prepare the cups. I currently have an amazing tasting DISASTER of some food in my kitchen..... :(

Quesadillas II

Let me say mmmmm! @_@ Delicious and so very easy to customize. I am saving my chicken for tonight, so just did this as a cheese quesadillas. Made a couple variations just to try (olives, home made guacamole, garlic powder, hot sauce, etc) it out and WOW! This would be hard to mess up, and is even easier then I thought it would be! I covered my baking sheet with tin foil and sprayed a tiny amount of cooking spray. This crisped up so nicely! This is an everyone dish ^_^

Wine Baked Potato

This is one of those recipes that makes you exclaim right as you taste it. Was ASTOUNDING! Like suggestions, I made some changes. I used Christian Brothers California Dry Sherry. I replaced the butter with olive oil. Also added some garlic powder to the oil and drizzle sot sauce in with the wine BEFORE the oil. Also cut the onions VERY thin. Half moon shaped wedges fit in good going in an upside down U way. So they bend with the shape of the potato. Also, using a butter knife to hold the cuts open worked AMAZING! Glad I read that, The oil locked in the juice n flavors. The onion broke down to the consistency of the potatoes. I was cooking for someone that hates the texture of onions. They didn't even believe me they were in there since they had the same texture as the potato. The wine just turns it all to an amazing hand mashed texture. Other wines and different salts could change the taste a bit. So could stuffing in thin garlic slices. but it doesn't NEED improved. Tastes freaking AMAZING ^_^

Cheeseburger Meatloaf

The jelly roll thing for this was easy for me (had never tried it before) but may have been an accident lol Basically I picked up the end of the wax paper and started lifting, like I was gonna tip off the burger / fold it using the paper. Well, right as the first side started to roll over, I peeled the paper back and with one hand UNDER the edge of it, I just lifted the burger with my off hand (the one UNDER the wax paper), and peeled back the paper with my main hand. Basically just rolling it, while peeling off the paper. I put the end of the paper on the cookie sheet and just rolled it right on. Other tweaks to list later: I added pickle juice to the meat. Added minced garlic. Replaced the reg salt & pepper with a combo of Lawry's and Celery salt, TINY amount of black pepper (for flavor, not heat) and Worcestershire. Painted the loaf with drizzled olive oil And BBQ sauce. (non home made... Lazy :P). After taking it out I moved it to ANOTHER cookie sheet due to the amount of grease. I had a POOL of it. So moving it over made me feel better then seeing it bathe in oil. Tasted AMAZING and the pickle juice added a much more authentic burger taste. And Lawry's always brings out the taste of burger. Gave it a 4 just because I could improve it still :P

Horseradish Pork Chops

Really unique taste, but didn't turn out right.. Ended up having more of a bread crumb stuffing looking toping. With some changes, and a lot of adjustments (brining!) this recipe could be amazing. Gonna do it again, but going to be changing it. a LOT. Was edible and good enough, but not enough to rave over.
