Lasagna Roll Ups

Made a few changes to this recipe, but all in all loved the concept. Omitted the tofu and spinach. (there are two things my husband will NOT eat...liver and spinach) In place of the tofu, we used 1 pound ground beef and 2 cups cottage cheese. With a tear in my eye(i love spinach) we did not replace the spinach. Then made to recipe specs. I loved the fact that these could be personalized (thus Momma getting her spinach next time) and can be frozen single servings to boot. I had extra filling left over as we only needed to prepare 6 rolls. They turned out amazing. Very good indeed. WILL be making these again. Be sure not to roll to "tightly" as the filling will ooz out if you do. My 10 year old loved how messy it was to roll them. But with a little practice and care it's fun to do.

Sarah's Rice Pilaf

Have been looking for this little more healthier version of Rice o Roni. My family absolutely gobbled it up like no tomorrow. I did use brown rice instead of white. Also cooked the brown rice a little before hand to give it a head start (as it takes a bit longer to cook then white). It was amazing and this will be my go-to rice recipe from now on! Thank you for sharing.

Prosciutto-Wrapped Cherry-Stuffed Chicken Breasts

Made these for Valentines supper for my 10 yer old sweetheart and my husband. I so enjoyed the making of these, following Chef Johns video step by step, TRYING to accomplished what he did ever so carefully. They were quite easy to make in the end. My husband like them, but I think the thyme was a little to much for my son's liking (and he eats most everything) so was a little sad it wasn't his favorite chunk of chicken,as he put it for a lack of better words. As for me I LOVED every bite Only made one little change, used dried cranberries instead of cherries. I never knew my hands could make chicken look so pretty to eat!

Made these for our veggies one night for supper. Was quite surprised these little bites were more tasty then I expected. Although next time I think we will omit the OL, just my preference. Also topped with some mrs. dash.

Fruit Salsa with Cinnamon Tortilla Chips

This hit the spot! Easy to make, very kid friendly to make also. A few minor changes, just because of what we had on hand, Didn't have kiwi, so replaced with pineapple (happened to have some fresh from the night before) Although we DID NOT fry the tortilla , we simply spread out the cut tortilla on a wired cooling rack, set the wired rack in a jello roll pan to catch any droppings of cinnamon sugar, sprayed one side with butter flavored Pam, sprinkled with cinnamon sugar, then flipped them all and repeated on the back side. Popped them in a warm oven (350) for about 8-10 minutes (I could smell the cinnamon sugar, so that was my cue to pull them out). They disappeared in mere minutes! I had served black bean soup and salsa for supper (recipe from AR), this was a nice compliment to the meal. WILL be making these again.

Black Bean and Salsa Soup

This was amazing! I was a little nervous about serving this to my family I will admit, but it looked and sounded wonderful to me. Glad I went with my gut on this one. My husband and 10 year old son loved it as much as I did. WOW! took me a whole 15 minutes to throw together, but made one minor change. Threw it all in my soup decanter, or fancy soup serving bowl and put it in the oven when I got off work. Let it warm at 275 for about 30 min. because my husband was running late. Also made Fruit salsa with cinnamon tortilla chips, recipe on AR also. Yum!

Oatmeal Peanut Butter Bars

OH MY GOODNESS!!!!! These are so yummy. Made as recipe as it said except I had to omit the sunflower seeds and coconut, only because I didn't have any on hand. Can hardly wait to make them again with them. These are fabulously delicious and addicting! Thank you for sharing this recipe, have been looking for a soft granola type bar forever. Take care in your baking time, as always. Mine were done in about 18 minutes

Stuffed Peppers

Made these for supper and followed recipe almost to the T. They were fabulous. Only change I made was to season burger as I browned it. Added onion and garlic, pepper and a pinch of salt. Thanks, will be making this again and again.

~ Apple Dumplings ~

This is such and easy recipe. Made a few changes, I only made half the recipe, using 1 tube of cresent rolls and 1 apple, cut butter down to 1/2 cup and sugar to 1/4 cup and half a can of Mt Dew. These were AMAZINGLY good. I beleive it took us a total of 10 minutes to clean out the pan! Made for a great snowy Sunday afternoon treat.
