These were very good, though I would have given 4.5 stars If I could have because I thought that 3 T of olive oil was too much. My two sweet potatoes were huge, and just didn't crisp up enough because of too much oil. BUT, they were delicious anyway! Next time, and there will be a next time...I will just drizzle 1 tablespoon of the oil over the cubes AFTER I have tossed them together with the seasonings and then give it all a shimmy-shake! I used a steak seasoning as well as a spice grinder combo of garlic and onion INSTEAD of the poultry seasoning, black pepper and chili powder. Everything else called for went into the mix and I went quite a bit heavier with the brown sugar....maybe because I had a ton of sweet potato cubes! Everyone enjoyed these, and they are a much healthier alternative to the mashed white potatoes I would have served with the pot roast dinner we had tonight.
