Classic She Crab Soup

Reviewed: Oct. 16, 2005
Really, really good! Made as directed but had to sub clam juice for the fish stock..no problem there! Since real 'she-crab' soup is made with the roe from females which gives the soup a beautiful pale coral color I did add some cayenne to spice it up a bit and add a little color..yummy!

Slow Cooker Island Beef

Reviewed: Apr. 30, 2010
Great tasting stuff, we all enjoyed this...especially my 12 year old! She usually picks out any tomatoes and peppers but she gobbled up everything in this dish. I made this with 2 pork tenderloins and the pork was so succulent and flavorful......mmmmm, thanks Cyndi!

Grilled Flank Steak Salad

Reviewed: Apr. 13, 2010
Great salad, made as directed except for a change in the salad greens. I didn't think I would care for the celery in this salad but it all worked! I passed some blue cheese crumbles at the table. Voila! Served this with Cheddar Bay biscuits from this site, nice meal!

Cheddar Bay Biscuits

Reviewed: Apr. 13, 2010
*danger, danger-remember portion control* these are very hard to resist! Super easy and super good! We used the lower fat version of the baking mix and these were still so tender and flaky, we all loved them! I loved them the most since my daughter made them while I was putting together the salad.

Asian Lettuce Wraps

Reviewed: Apr. 8, 2010
Oh my goodness, what a treat this is! I had everything on hand to make this except for the ginger and intact lettuce leaves. I had some ginger paste in a tube that I used to get that flavor. I had to serve this as a salad on top of a platter of lettuce, and instead of cooking the green onions, I sprinkled them along with shredded carrot for color on top of the meat. It looked gorgeous and tasted even better. Surprisingly, my hubby went nuts over this and found it hard to leave any for our daughter who was at a Girl Scout meeting! Thanks for sharing this Rachel!

Seven Layer Salad

Reviewed: Apr. 4, 2010
Wow, this was great, and looked beautiful on the table too!. My family isn't fond of cauliflower so I chopped it very small and they never seemed to notice it was there. I did mix in sour cream with the mayo to thin it a bit. I will certainly make this again!

Cream Cheese Frosting II

Reviewed: Apr. 4, 2010
Perfect, rich and creamy, very easy. I added a bit of finely grated lemon rind to perk it up a bit, it was just the right frosting for carrot cake.

Chewy Brownie Cookies

Reviewed: Mar. 26, 2010
I thought these were amazing! I only had a little shortening so had to do a blend of butter/shortening and it worked perfectly. My daughter and her friend wiped out a plateful when they came through the door...that's a hit!!

Easy Taco Pizza

Reviewed: Mar. 12, 2010
This pizza is surprisingly good for such minimal effort. I had a Pillsbury pizza crust in the fridge that needed to be used so I used that after partially baking it. Thought that pork was an odd choice for a taco pizza but goodness, the recipe was posted by the National Pork Board! I did use the pork and a chipotle flavor taco seasoning mix and the flavor was awesome! Based on the reviews, I put my tortilla chips under the cheese and they were perfect. Added chopped fresh roma tomatoes on top before baking. I also sprinkled some sliced green onions on top with the lettuce and olives. Everyone loved it...my hubby just devoured it, even loaded with the lettuce!

The Best Thai Coconut Soup

Reviewed: Mar. 3, 2010
Yummy, this is exquisite! I had everything on hand to make this except for the lemon grass and the shitakes. Ran up to the market, chose the lemon grass paste in the tube and had to settle for baby bella mushrooms. Next time I make it I will cut back on the brown sugar. So good, thanks for sharing this one!

Sweet and Spicy Sweet Potatoes

Reviewed: Feb. 3, 2010
These were very good, though I would have given 4.5 stars If I could have because I thought that 3 T of olive oil was too much. My two sweet potatoes were huge, and just didn't crisp up enough because of too much oil. BUT, they were delicious anyway! Next time, and there will be a next time...I will just drizzle 1 tablespoon of the oil over the cubes AFTER I have tossed them together with the seasonings and then give it all a shimmy-shake! I used a steak seasoning as well as a spice grinder combo of garlic and onion INSTEAD of the poultry seasoning, black pepper and chili powder. Everything else called for went into the mix and I went quite a bit heavier with the brown sugar....maybe because I had a ton of sweet potato cubes! Everyone enjoyed these, and they are a much healthier alternative to the mashed white potatoes I would have served with the pot roast dinner we had tonight.

Savory Kale, Cannellini Bean, and Potato Soup

Reviewed: Feb. 2, 2010
Awesome soup! Opened my email this morning to find this recipe in my mailbox. I had everything on hand except for the kale, ran out for that and the rest is history. I followed the recipe with the addition of a few slices of bacon that I chopped up and browned with the onion in the first step. Even with the use of dried herbs (my herb garden is under several inches of snow!) the flavors are exceptional. My 12 y.o. daughter couldn't get enough of this amazing stuff. Thank you for sharing this recipe. Yum....can't wait to have the leftovers for lunch tomorrow!

Sausage Stuffed Jalapenos

Reviewed: Nov. 8, 2009
These are a knockout! The whole family scarfed them up during half-time. I used half jalapenos and half banana peppers because that is what the garden gave me! I used hot Italian sausage and I am glad I did, otherwise the banana pepper ones wouldn't have had enough heat. What worked for me was placing the filled peppers on parchment paper on a cookie sheet. 400* for about 15-20 min. Perfection and minimal cleanup. The only thing that would have made any improvement would have been a win by those poor Redskins. Give this recipe a try, you won't be disappointed! Update 9/6/11: Be sure to eliminate as much grease as possible after browning the sausage...I remember now that when I made these before, after draining the grease, I blotted the sausage to get rid of more. This time I forgot to do that and they were a bit greasy, but still excellent!

Byrdhouse Marinated Tomatoes and Mushrooms

Reviewed: May 4, 2010
Nice dish! Very light, fresh and flavorful as well as looking lovely on the plate. The longer this sits, the more the flavor deepens. I used grape tomatoes and they were so tiny I just left them whole. Followed the recipe exactly and was very pleased.

Cottage Cheese Pancakes

Reviewed: May 23, 2010
Wow, very surprised at how good these are! I doubled the recipe and used equal parts white and whole wheat flour. Added a tsp. of vanilla too. I followed the advice of a few others and blended my cottage cheese with a stick blender until the lumps were gone before adding the rest of the ingredients. My husband could not get enough of these and both my daughter and I thought they were some of the best pancakes ever! Very pleased to have a pancake breakfast that is packed with nutrition (esp. after adding the whole wheat) and not just an overload of carbs!

Korean BBQ Chicken Marinade

Reviewed: May 29, 2010
So easy and so good. When I tasted the marinade after it had simmered, it was very concentrated and salty. I added an extra cup of water at that point and then marinated the chicken. The grilled chicken was perfect, not overly salty but nicely flavored. I drizzled a bit of the marinade that I had set aside over jasmin rice with green onions....we loved this!
