Tex-Mex Burger with Cajun Mayo

This was very good, but I think next time instead of Cajun seasoning in the mayo, I would use a chipotle cumin mix. Also, I had a hard time keeping the burger patties formed, had to freeze them a bit to hold together for the grill. They were pretty wet...maybe next time just a little bit of fine bread crumbs to hold things together. We will make these again, my husband loved these burgers!

To Die For Blueberry Muffins

Perfection! I did my usual half applesauce, half oil and half AP/half whole wheat flour to make things just a little healthier and the texture was perfect! I doubled the recipe and got 22 nicely rounded regular sized muffins.

Strawberry Oat Muffins

4 stars as is, make it a 5 star by adding a teaspoon of cinnamon. Others reviewers complained about a lack of flavor but with the cinnamon they were delicious. I used white whole wheat flour and half applesauce/half oil and chopped the berries fairly small. Great breakfast treat, thanks!

Sweet Potato, Black Bean and Chicken Enchiladas

I was given this recipe to make for the "unmade personal recipes" project. I was so glad to see it because Mexican type food is my favorite. Despite the long list of ingredients (I had everything on hand except the sweet potatoes and cilantro) this is very easy to put together. I did not deviate from the recipe except I went a little heavy on the cumin since it's my favorite spice. I wasn't sure what the yellow mustard would add but I put it in as directed. I forgot to put the olives in the filling so I sprinkled them on top. Holy cow...these enchiladas are amazing. The flavor is so complex, rich, but with the crispness of the lime (and maybe the mustard?) everything balances out perfectly. My husband was the first to declare it 5 stars 'if not more'!

BBQ Baby Back Ribs

This is a great tasting rub and the method turns out succulent, tender ribs! I have made baby backs only about a half dozen times, but the other times I pre-baked them in the oven before grilling. I didn't want to heat the house up today so I tried Celeste's recipe. Amazing, will do it this way from now on, thank you Celeste!

Strawberry Coffee Cake

Doubled the recipe and baked in a 9x13 pan and I'm sure glad I did! Great stuff! I made it with white whole wheat flour to make it just a bit healthier.

Yummy Honey Chicken Kabobs

I made this recipe exactly as written but wish that I had followed my instincts to add more garlic and maybe some fresh grated ginger. The chicken was tender but salty and the flavor was just, well...sort of dull.

Lemon Pie Bars

Mmmm, so good! After looking at the photos before making this I could see that many bars looked to be about equal depth of filling and crust. I wanted a thicker filling so I did 1.5 times the filling amount and it was just right. Just perfectly lemony, we loved these!

Terry's Texas Pinto Beans

While I cannot rate this based on the cooking method of the beans I can rate on flavor. I used rinsed and drained canned pintos because I didn't trust the 2 hour cooking time for the beans. I invited neighbors for a spontaneous taco dinner and only had a few hours to prepare! I had everything else on hand...even the green salsa. So, of course the beans were tender but the dish lacked flavor. I let everything simmer for about 45 minutes and then sampled it. Dull, flat. After adding more of everything and some ancho chili powder, salt, more green salsa....and a spritz of fresh lime at the table, I was happy.

Double Decker Tacos

What a great idea! In our family, we are split between hard and soft tacos so I always have both but it never occurred to me to layer them. I made a different version of the guacamole and used homemade taco seasoning, and made some other changes to suit our tastes, but the method is the same. These are filling, my hubby usually puts away 5-6 tacos, but after 3 of these he was content! Love that you get the nice crunch without the taco falling apart in your hands.

Beer Can Chicken

What a great way to grill chicken! I was lucky enough to get a deal on organic chickens, buy one, get one free! I followed the recipe exactly, they finished with a flavorful crispy skin and the meat was moist and juicy. My birds were 4 lbs. each and took about and hour and 45 min. over medium heat. I did have some problems with flare up even though my chickens were over a burner that was turned off. Next time I will lay a piece of foil underneath the chickens.

Bananas Foster Chimichangas

I tasted the sauce and felt it needed something so I added vanilla as suggested by another reviewer. I had 3 tortillas to use up and one large banana per tortilla was perfect. I did double the sauce so there would be plenty. Served with vanilla ice cream....heavenly!

Miss Betty's 24 Hour Lettuce Salad

Very pretty salad! The family loved it, in fact my 13y.o. decided she would skip the rest of the meal in favor of this salad! It does need salt and pepper and I was generous in adding these to the mayonnaise dressing. I see this making many appearances at summer barbecues!

Vietnamese Fresh Spring Rolls

Great recipe! Once I got the hang of it, these rolls came together quickly. If you haven't worked with these delicate wrappers before...make sure to plan that the first four or five won't be very pretty! Instead of lettuce, I used some angel hair shredded cabbage and added shredded carrots for more color. I used bean sprouts in the filling as well. The dipping sauce was excellent.

Oh My Goodness, is this ever good and he's not kidding about decadence! Make sure to use elephant garlic, it does have a very different aroma and flavor than regular garlic. Making this a day ahead is convenient, but also necessary to allow all these wonderful flavors to blend together. Thanks Gary for sharing this awesome recipe, everyone loved it at our Easter dinner.

Bird Rolls

I love these sweet little rolls, they were the hit at the Easter table! I made these with my 13 y.o. daughter and we are very beginning bread bakers. To our surprise, they came out great. I added another 1/4 cup flour because the dough was so sticky but the rolls still came out tender and soft. We had to 'high five' each other when we tasted the first one!

Maria's Pepper Steak

This is excellent, and a 5 star recipe after a couple of tweaks. The sauce is just the right balance of sweet and sour, but I thought it was missing something. I grated some fresh ginger into the sauce and it was perfect. I also agree with the reviewer that mentioned cooking the steak by itself in a little oil after the vegetables are removed from the pan and then setting the steak aside, instead of cooking it in the sauce. Add the sauce to the pan/wok after pouring out any fat and boil gently until thickened and then toss the meat and peppers back in and stir to coat. Very easy to throw this together and can be done quickly since no marinating is required.

Jan's Wheat-N-Honey Sandwich Bread

I am so thrilled with the way this recipe turned out! This was my first attempt at homemade bread, and it was a learning experience for me. The bread has a lovely texture with just a touch of sweetness, perfect for sandwiches and it makes amazing toast as well! I don't have a bread machine, so I used my mixer to knead the dough, let it rise once and then divided the dough into the pans to let it rise again. I will make this again as I hope to develop my bread baking skills. Thanks WFDM? for sharing this recipe!

Delicious Ham and Potato Soup

Now I see why everyone recommends this soup, it is terrific! My only issue was that it was very salty...a function of the ham I'm sure. But with ham, and the bouillon granules I am sure glad I didn't add the extra salt called for. Very quick and easy to throw together and the texture was smooth and creamy. We loved it!
