Tangy Grilled Pork Tenderloin

How could something this simple taste so amazingly good?? I used ancho chili powder and prepared as directed. Perfection! The marinade was so good that I boiled it down and served it as a glaze at the table. This one's a keeper for sure!

Pineapple Banana Bread

Looks like I'm in the minority with this one. This bread was just a little too 'everything'! Too sweet, too mushy-guess this was from the pineapple, too oily? Hard to describe why I wasn't crazy about this. I can see how a few changes would improve this recipe and make it a little healthier too, but I don't think I'd bother to make it again.

Sweet Potato Biscuits

Excellent! I didn't use the canned potatoes, as I was looking to us up some leftover mashed sweet potatoes. My sweet potato was seasoned with cinnamon, cloves and a bit of pepper, we enjoyed those flavors in this biscuit.

Cinnamon Pumpkin Waffles

Oh My Goodness, these are amazing! How nice to have something for breakfast that packs in a ton of nutrition. I made this using the white whole wheat flour and my family didn't seem to be able to tell that they are "whole wheat" waffles. I subbed Splenda for the sugar, didn't have applesauce so I used all pumpkin, walnuts were on hand so I used those instead of the pecans. The only thing I added was a teaspoon of vanilla into the wet ingredients. I will make these often, they are that good!

Zucchini e Pomodori Gratinati (Zucchini and Tomato Gratin)

This is simple perfection in a baking dish, and pretty quick to put it together. The only thing I had to do differently was to saute my garlic separately as it over browned when I put it in the pan with the zucchini. I just sprinkled it between the layers as I assembled the gratin. I also found that on my stove top, 8 minutes a side was quite a bit too long for the zucchini, I just cooked them until they started to soften and brown a bit. The flavors are incredible, everyone enjoyed this!

Banana Pancakes with Berries

We just had breakfast for dinner with these, some bacon and an omelet. We all liked these pancakes, especially my daughter! From trial and error with a couple batches, make sure your banana slices are thick, at least a quarter inch as directed and cook on the 'hard' side so they lift easily from the griddle. The sauce I changed a bit, I thought 3 tsp. of vanilla would be overwhelming so I used just one and it was plenty. I cut back on the sugar a bit too. Fozen mixed berries worked well for this.

Easy Granola Bars

My husband loves these, he's been taking a couple in his lunch box the last few days. I used a jelly roll pan and found the bars to be the perfect thickness that way. I also recommend following the suggestions of the most helpful reviewer, I did...and had no problems with a soggy bottom crust. I added raisins into the mix as well as the cranberries. Very good, moist and chewy. I'm storing mine in the fridge in a plastic container and on day 4 they are still moist and fresh tasting.

Satiny Chocolate Glaze

I've used this twice now, and it's just perfect the way it is! I glazed homemade donuts with it as well as drizzled it over a cake with peanut butter frosting. I also put a thin layer of this in the middle of the cake on top of the frosting and it looked very pretty. This glaze sets up very nicely.

Triple Dipped Fried Chicken

Oh my gosh, I have finally made fried chicken that was actually delicious! I'm so happy! Seriously, I try a few times a year to make a good fried chicken with little to no success. This was perfect! I did go a little heavy on all the seasonings and added some cayenne to the batter because we like a little more spice and it came out just perfect. It was light,crispy and juicy. The leftovers were scarfed up for lunch boxes the next day. Thank you for posting this recipe!

Authentic, No Shortcuts, Louisiana Red Beans and Rice

We loved this recipe! Made it exactly as directed but had to sub another sausage (jalapeno/chicken) for the andouille and using beef broth for half the water. This makes such a hearty, flavorful dish for minimal effort. I did find it to have way too much liquid and next time I would cut back on the liquid to 7-8 cups. I pureed some of the beans to thicken it slightly and give it some body. The flavor is awesome, thanks Melissa!

Key West Chicken

We loved the flavor of this chicken, so fresh! The amount of marinade here is perfect for a pound of breasts but I would double it next time and set aside half to drizzle over the chicken for serving. I served this with a Caribbean flavored rice and beans. Good stuff!

Keni's Honey Vanilla Roasted Baby Carrots With Almonds Recipe

Par boiled the carrot chunks - used whole carrots, then finished on the grill in the grill pan. Sprinkled with feta just before pulling off the grill, very good stuff.

Here's a tip, make a double batch because you're going to want more! I cut the sugar in half and used splenda for the rest. I also dissolved the sugar in some boiling water so it wouldn't settle out. Just perfect for a hot summer afternoon!

Caprese on a Stick

This is a great appetizer and goes over well with kids and adults. I threaded another piece of basil and the other half of the cherry tomato at the bottom. It really looked pretty, but I felt it could use a little something 'extra' so I drizzled with balsamic vinegar in addition to the oil. Perfect...5 stars with that addition.

Homemade Laundry Soap

OK, finally got everything for this and made it last weekend. I have done multiple loads of wash with this including the Saturday load of 6 pairs of my hubby's dirty work jeans. This stuff works just as well as expensive laundry detergents! I spent about $7 on ingredients and should not have to buy laundry soap for months...maybe not until winter! Thanks for posting this Nana..it's a keeper!

Jan's Pretzel Dogs

Perfect, just perfect! My daughter helped me make these and we had so much fun! With the exception of using my KA mixer to knead the dough (no bread machine) and then letting it rise for an hour, I followed the directions exactly. The pretzel dogs came out perfectly and were so good! We had a selection of mustards for dipping, but they are really good on their own, thanks WFDM?! Addendum...tonight we had some of these that I had frozen. I wrapped one loosely in a paper towel and microwaved at 70% power for a minute. They came out very fresh tasting.

Spicy Chipotle Turkey Burgers

Wow are these ever good! Instead of cilantro which I didn't have (not crazy about the stuff anyway) I very finely minced an orange bell pepper half and added that in. Also added an egg to help hold things together. After making the patties I set them on a flour dusted wax paper lined cookie sheet and into the freezer they went. They firm up in about 15 minutes and there is no problem with them breaking up on the grill. Provolone is great on these and I made a chipotle mayo to serve on top. We all loved them, lots of oohs and aaahs at the table tonight!
