Kalua Pig in a Slow Cooker

I don't know why I've had this recipe in my box for at least five years and have never made it until now! Follow the directions and you'll end up with moist, flavorful and juicy shredded pork. We're having it tonight with little Hawaiian rolls, coleslaw and baked beans.... the sky's the limit for the leftovers! I wonder about the liquid smoke...if different brands could make a difference? I had no complaints of an overwhelming smoke smell. Just perfect!

Italian Turkey Cutlets

This is quite good, I thought the seasoning was just right...and the sauce improved the longer it simmered. I think the issues with too much seasoning depends on what brand of tomatoes you use and personal tastes. Just add the herbs a pinch at a time. Much healthier than a breaded parmigiana but with all the flavor intact!

House Fried Rice

Looking for a way to use up leftover holiday ham and a few cups of finely diced veggies from another recipe....I found this! I used leftover white rice that was in the fridge and fried that up separately in some sesame oil, then tossed in the veggies that had been stir-fried in vegetable oil, the ham and 2 cooked eggs, then the soy. Wow, this tasted better than take out! 5 stars from everyone! Perfect!

Best Big, Fat, Chewy Chocolate Chip Cookie

I baked these for my dad's 84th birthday and I must say....none of them made it to his house! I had to make another batch and box them up as soon as they cooled! So, yes, I'd have to say they are pretty darn good, maybe even the best!

Cindy's Awesome Clam Chowder

This is a very hearty chowder, really warms the soul! And Cindy, you're right...the whole family adored it! I would recommend that you don't add any salt...the bacon and the soup mix make it plenty salty, wait until serving to taste test then add salt if needed. I put in one package of soup mix, blended it and added part of the other, I guess about a half, until it tasted right to me. Thank you Cindy for posting this delicious and easy clam chowder!

Simple Taco Soup

So easy and good! I had nearly a pound of leftover taco meat so I used that and skipped the first part of the recipe. A can of Rotel works great if you've got it. My recommendation is to use half a packet of the ranch mix and then add more to taste, it's pretty strong stuff. Half was perfect for us. I also added some broth because we wanted this more of a soup than a chili. I'll fix this many times, I'm sure!

Chicken and Gnocchi Soup

Comforting and delicious is right on Christina! We loved this soup and I appreciate how quick and easy it is to throw together. Followed the recipe closely, using a small rotisserie chicken that I pulled apart. I used fat free half-and-half and only about a cup, that was plenty creamy for us and saved quite a few calories and fat. I had half a red bell pepper that needed using so I diced that up with the other veggies. There was no need for the optional cornstarch slurry, this was a perfect consistency without it. For those that commented that this soup lacked flavor, I would look to your chicken broth as the culprit! Make sure you choose a flavorful one, or better yet make your own.

Tangy Grilled Pork Tenderloin

How could something this simple taste so amazingly good?? I used ancho chili powder and prepared as directed. Perfection! The marinade was so good that I boiled it down and served it as a glaze at the table. This one's a keeper for sure!

Pineapple Banana Bread

Looks like I'm in the minority with this one. This bread was just a little too 'everything'! Too sweet, too mushy-guess this was from the pineapple, too oily? Hard to describe why I wasn't crazy about this. I can see how a few changes would improve this recipe and make it a little healthier too, but I don't think I'd bother to make it again.

Sweet Potato Biscuits

Excellent! I didn't use the canned potatoes, as I was looking to us up some leftover mashed sweet potatoes. My sweet potato was seasoned with cinnamon, cloves and a bit of pepper, we enjoyed those flavors in this biscuit.

Cinnamon Pumpkin Waffles

Oh My Goodness, these are amazing! How nice to have something for breakfast that packs in a ton of nutrition. I made this using the white whole wheat flour and my family didn't seem to be able to tell that they are "whole wheat" waffles. I subbed Splenda for the sugar, didn't have applesauce so I used all pumpkin, walnuts were on hand so I used those instead of the pecans. The only thing I added was a teaspoon of vanilla into the wet ingredients. I will make these often, they are that good!

Zucchini e Pomodori Gratinati (Zucchini and Tomato Gratin)

This is simple perfection in a baking dish, and pretty quick to put it together. The only thing I had to do differently was to saute my garlic separately as it over browned when I put it in the pan with the zucchini. I just sprinkled it between the layers as I assembled the gratin. I also found that on my stove top, 8 minutes a side was quite a bit too long for the zucchini, I just cooked them until they started to soften and brown a bit. The flavors are incredible, everyone enjoyed this!

Banana Pancakes with Berries

We just had breakfast for dinner with these, some bacon and an omelet. We all liked these pancakes, especially my daughter! From trial and error with a couple batches, make sure your banana slices are thick, at least a quarter inch as directed and cook on the 'hard' side so they lift easily from the griddle. The sauce I changed a bit, I thought 3 tsp. of vanilla would be overwhelming so I used just one and it was plenty. I cut back on the sugar a bit too. Fozen mixed berries worked well for this.

Easy Granola Bars

My husband loves these, he's been taking a couple in his lunch box the last few days. I used a jelly roll pan and found the bars to be the perfect thickness that way. I also recommend following the suggestions of the most helpful reviewer, I did...and had no problems with a soggy bottom crust. I added raisins into the mix as well as the cranberries. Very good, moist and chewy. I'm storing mine in the fridge in a plastic container and on day 4 they are still moist and fresh tasting.

Satiny Chocolate Glaze

I've used this twice now, and it's just perfect the way it is! I glazed homemade donuts with it as well as drizzled it over a cake with peanut butter frosting. I also put a thin layer of this in the middle of the cake on top of the frosting and it looked very pretty. This glaze sets up very nicely.

Triple Dipped Fried Chicken

Oh my gosh, I have finally made fried chicken that was actually delicious! I'm so happy! Seriously, I try a few times a year to make a good fried chicken with little to no success. This was perfect! I did go a little heavy on all the seasonings and added some cayenne to the batter because we like a little more spice and it came out just perfect. It was light,crispy and juicy. The leftovers were scarfed up for lunch boxes the next day. Thank you for posting this recipe!

Authentic, No Shortcuts, Louisiana Red Beans and Rice

We loved this recipe! Made it exactly as directed but had to sub another sausage (jalapeno/chicken) for the andouille and using beef broth for half the water. This makes such a hearty, flavorful dish for minimal effort. I did find it to have way too much liquid and next time I would cut back on the liquid to 7-8 cups. I pureed some of the beans to thicken it slightly and give it some body. The flavor is awesome, thanks Melissa!

World's Best Biscuits
