Picnic Potato Salad with No Mayonnaise

So simple and fresh, we loved this potato salad! I used a white balsamic vinegar in the dressing so as not to discolor the potatoes. Thanks for sharing this, Maridele!

Strawberry Avocado Salad

Delicious, fresh salad! After reading other reviews, I chose to leave out the sugar and I'm so glad I did. The dressing was excellent, and just a bit sweet, even without the sugar. No pecans on hand, so I used sliced almonds. Very good!

Heavenly Angel Food Cake

This cake is very easy to make, and it tastes angelic! I haven't tasted many angel food cakes in my day, so I can't say if this texture is perfect....but to me, it is, so light, and moist!

Grilled Shrimp Tacos

These were incredible but I made a few changes. I added a crushed garlic clove to the marinade and put it and the shrimp in a bag to sit for an hour. We grilled the shrimp in a grill basket instead of skewers and they looked so pretty I decided not to chop them up. I also didn't have the salad kit so I mixed ranch dressing with a little salsa, and skipped the sour cream. We loved these, the dressing was a perfect compliment to the citrusy shrimp.

Homemade Flour Tortillas

Like others, I didn't intend to make homemade tortillas but found myself wanting tacos for dinner but not badly enough to go to the store! These are super easy, came together very quickly and we loved them! I had planned on halving the recipe but after reading the reviews about how small the tortillas come out, I made the full batch and cut into 12 portions. The size was perfect, a nice 8-10" tortilla. I also used 3 Tbsp of shortening and the tortillas didn't come out dry as others mentioned. Oh,I did have a helper who rolled them out while I 'fried' them, see if you can get someone to help you!

Summer Fresh Pasta with Tomatoes and Prosciutto

This is my recipe and I just noticed the directions were changed by AR. The first part of cooking the pasta really should be done at the last minute. It's important to make the tomato mixture and let is sit a bit so the salt draws some of the juice out of the tomatoes and creates more 'sauce'. Of course, you'll need juicy tomatoes to start! The step with the pasta water was only intended to be used if you needed more sauce, please don't dump it all in!

Fantastic Potato Salad

Finally, I have found a recipe that is just like my mom's. I never had her write her recipe down and I'm forever trying to come close, without success. This is the potato salad I grew up with, love it! Thanks for sharing your delicious recipe, Celeste!

I've made this twice now, just realized I never reviewed it. I typically don't care for alcohol mixed with dairy but this is nice. It tastes 'light', maybe because it uses milk instead of cream or half&half. If you like your drink to be creamier, I would use that instead. Nice night cap!

Pork Chops with Onions and Apples

Grilled Mediterranean Greek Pizza with Sundried Tomato Chicken Sausage

Really good pizza! I added onions since they are a must on any pizza we have, and I also added baby spinach near the end after the cheese was mostly melted. I found that one package of sausage was enough for 2 pizzas, so that's what I made. There was still lots of sausage on each one. Good stuff!

Sweet Italian Chicken Sausage and Tortellini Soup

This soup is so delicious! I was skeptical, thinking it would be bland with basically no seasoning in the broth. I expected to have to add some herbs, salt, something....but I was wrong. The al fresco sausage was so flavorful that once I added it back in and let is simmer a bit the flavor was excellent. Red wine went into this soup since I had no white wine on hand. I did add fresh ground pepper and some grated fresh Pecorino cheese to serve. We all enjoyed this soup!

Kickin' Collard Greens

I have a love/hate relationship with collard greens! I love them when they are made by my neighbor and have always dislike them when I cooked them. This recipe made me happy, the whole family enjoyed them! I saw some reviews complaining of them being 'way too vinegary' but there is no vinegar in the recipe! I do agree that 3 cups of broth is about a cup too much. Just keep an eye on them and add more if needed. I cooked mine a full hour and they were tender.

Basic Corn Muffins

These corn muffins were a bit too dry for our tastes, I see that some reviewers added an extra egg and that might be just what it needs. I would go with a bit more salt as well. This recipe gave me 12 very pretty muffins.

Grilled Sweet Italian Chicken Sausage with Tomato Cream Sauce Over Linguine

This was pretty tasty, although it was nothing memorable. The cabernet that I used made the sauce an unattractive color when it mixed with the tomatoes. I let the sauce simmer about 20 minutes before adding the cream to allow it to thicken. I also found myself smooshing the tomato chunks to help with the thickening. It came out nice, the flavor was good and we all enjoyed it. My DD complained it was a little too sweet. I'm not sure if that was from the sausage or the cream.

Garlic and Herb Pull Apart Bread

I needed some kind of quick garlic bread tonight but had no french loaves or other bread to start with. I came across this recipe and had everything on hand except for the dried parsley. I grabbed fresh parsley from the garden and threw this together. What a hit and less than 30 minutes from start to table!

Summer Pasta Salad II

This is quite good, but the next time I make it, I think I'll leave out the broccoli, it just didn't seem to 'work' in this salad. I didn't have any salami so I left that out and probably used quite a bit less pepperoni..maybe a bit over 1/4 lb. I can't imagine putting a whole pound of meat in here. Otherwise, it was pretty good!

Irish Steaks

Very good, this recipe turned out a very flavorful and tender steak. I would recommend removing the onions after caramelizing a bit, before adding the steak to the pan. My steaks took about 8 minutes total and by then the onions were blackening. Next time I'll add a touch of cream to the whiskey sauce and simmer a bit. Don't be afraid of the whiskey leaving too strong a flavor, it doesn't!
