Key Lime Pie VII

Reviewed: Sep. 24, 2010
Perfect blend of sweet and tangy. Very nice texture, I received many compliments on this one! I made a crust out of shortbread cookies...subtle flavor that went great with this pie.

The Help, Chocolate Pie recipe

Reviewed: Sep. 24, 2010
This is 5 stars to me, if you add extra cornstarch. It just wouldn't set up as firm as I wanted until I tried adding an extra heaping teaspoon to the 3 tbsp. called for in the recipe.

Creamy Chocolate Frosting

Reviewed: Sep. 17, 2010
Perfection! This recipe came highly recommended and I was not disappointed! I was looking for a mocha java type flavor, so I added a couple of pinches of espresso powder, very subtle but it was a lovely flavor.

Schweinebraten Pork Roast

Reviewed: Sep. 16, 2010
Simple and quite good. The roast was moist and succulent. Just make sure you use a light beer, I had to use a regular beer and I felt that the beer flavor was a little too overpowering. We all enjoyed it, and next time I will use a light.

Streusel Topped Blueberry Muffins

Reviewed: Aug. 17, 2010
Delicious, and they pack and travel well too! For the topping, I used a mixture of brown and white sugar. I also used 1/2 cup whole wheat flour in place of some of the all-purpose and the muffins were still very light and fluffy. Love these!

Greek Tomato Salad

Reviewed: Aug. 3, 2010
Mmmm, except for BLT's, I can't think of a better way to use my homegrowns! We love the sharp flavors of this Greek salad, use good quality feta and olives. Definitely needs that hour of chill time for the flavors to meld. I can't wait to have the leftovers for lunch tomorrow!

Fabulous Zucchini Grinders

Reviewed: Aug. 3, 2010
Wow, these are really good! My husband was skeptical when he peaked at the laptop to see what I was preparing. His comment..."can't you throw some meat in there?" After the second bite his comment..." surprisingly, these are great!". I added sliced baby bella mushrooms to the zucchini, otherwise no changes. I'll make these again for sure! I served a fresh tomato salad as a side dish.

Bruschetta with Shallots

Reviewed: Jul. 31, 2010
This was delicious, but we all adore bruschetta anyway! I didn't use the specified amount of oil for the tomato mixture, I just drizzled and tossed until combined...maybe only 1-2 tablespoons...and it was plenty. I did away with the step of warming the oil and garlic. I have always made my bruschetta by just brushing the slices with olive oil and then rubbing a crushed garlic clove across the top. I put the toasts on a platter and let everyone spoon the tomato topping on top so the bread wouldn't get soggy. Someone at the table (not me!) had about 8 slices!

Japanese Zucchini and Onions

Reviewed: Jul. 26, 2010
So simple and easy, but so delicious! This went perfectly with teriyaki chicken. I added half a red bell pepper, thinly sliced for color, sauteed that with the onion. We all loved this one, thanks!

Authentic German Potato Salad

Reviewed: Jun. 30, 2010
Would like to give this four and a half stars but no half star available. The only thing that kept this from being perfect in my opinion is that it is too sweet. I ended up making another half batch of the dressing without sugar and blended that in. Delicious, we all enjoyed this and I will certainly make this again!

Blueberry Pie

Reviewed: Jun. 8, 2010
Oh my, this is one delicious pie! I did increase the blueberries to nearly 6 cups, increased the cornstarch and added a couple teaspoons of lemon juice. My daughter, who does not like blueberries and doesn't like pie,(except pumpkin!) tried it and proclaimed it "the best dessert ever"!

Six Threes Ice Cream

Reviewed: Jun. 6, 2010
So creamy and fresh! My DH was suspicious of all the citrus going into the ice cream but he absolutely loved this recipe. The flavor that comes through is a subtle banana vanilla with a bright crisp note to it. Great stuff!

Korean BBQ Chicken Marinade

Reviewed: May 29, 2010
So easy and so good. When I tasted the marinade after it had simmered, it was very concentrated and salty. I added an extra cup of water at that point and then marinated the chicken. The grilled chicken was perfect, not overly salty but nicely flavored. I drizzled a bit of the marinade that I had set aside over jasmin rice with green onions....we loved this!

Chocolate Scotcheroos

Reviewed: May 27, 2010
These are delish! I didn't have butterscotch chips on hand, had only a bag of milk choco chips so I used that. Made the mistake of refrigerating them for a couple of hours...it was hot in my kitchen....and they got so hard only a jackhammer could have cut them! They were fine after they sat for about 15 minutes. Next time I will follow the recommendation to put the chocolate in the middle of two layers, that's a great idea! These bars were history in no time!
