Joey's Peanut Butter Cookies
I'm not normally easy to dis-satisfy, but these were quite tasteless. Very bland flavor. The peanut butter flavor was almost missing, and they weren't very sweet. I am sorry to have to say that this cookie was a flop for me. The only reason this cookie has so many high ratings is because the cookie that normally comes out crunchy for the average home baker actually stays soft and chewy at the expense of taste.

Chicken Piccata with Angel Hair Pasta
This was absolutely delicious and simple to make! I used "Real Lemon" from the bottle, and used just under the 1/4 cup, added extra capers (love em!). It's very important you not over do the olive oil because it becomes the base for the sauce. I used a lot for the frying as I used a large skillet. My first time making Piccata and it was amazing. It's a favorite dish in italian restaurants (I'm an italian cuisine snob) and this was restaurant quality.

Best Spanish Rice
I didn't have any onion in the house so I used a minced clove of garlic that I browned in the oil (key is to let the garlic heat with the oil, always start with a cold pan). Then I used a wild rice combination (Royal Blend, Rice Blend) that has Texmati white, brown, wild, and red. It was very colorful and not bland at all! Also used a mexican brand of medium salsa that was NOT chunky.
