Fettuccine Alfredo

I added salt, pepper, and garlic powder. In addition, I used fresh parmesan cheese instead of the powdered stuff and I used unsweetened rice milk instead of regular milk. The flavor was really good. I especially loved the fresh parmesan flavor. The sauce was a little thick, but nothing that some additional milk didn't fix. I will double the recipe next time.

Chocolate Chip Cookie Dough for Ice Cream (Eggless)

Thought this was good. I did make the following changes though. I melted the butter. I didn't have brown sugar so I used all white sugar (next time I will make sure to have brown sugar available)! I used hemp milk. I used tapioca flour and increased it to 1 1/2 cups. I used only a 1/4 tsp salt (and that was still too much for me). I used 1/4 cup mini chocolate chips. I made this just to eat raw. I really like it. I am sure it will be even better when I have brown sugar for it.

Garlic Spinach Soup

Love this soup!!! I did change it up a little. Made it twice so far, first time I added carrots instead of zucchini and used gluten free noodles instead of cellophane noodles. I had to add 4 more cups of broth because of the noodles I used, but it was great. Second time, I poached my chicken breasts first then used the water from that (4 cups worth) and added 4 cups of boxed chicken broth. I doubled the garlic and ginger root because of the extra liquid. I used 1 cup of frozen peas instead of zucchini. I used 2 cups of shredded chicken and 4 cups of spinach and a box of gluten free shell pasta. I love this stuff!! better the second time with the increased garlic and ginger. Thank you for a great recipe that is also very flexible!

Homemade Black Bean Veggie Burgers

I didn't add peppers or the spices, just some salt and pepper and the fresh garlic and half an onion. My onion must have been huge compared to theirs because it turned out to be an onion burger with some black beans :-) Good thing I love onions! I added half an avocado and some shredded carrots. Next time I will use a whole avocado. I used flaxseed instead of eggs because my dad is vegan (1 Tbsp flaxseed meal in 3 Tbsp water is a good egg replacer). I also used tapioca gluten free bread. I had to add more beans because I had way too many onions. I also chopped everything instead of processing it in a food processor. It could use more binding ingredients even though I doubled the bread. Either more bread, or using rice instead and more rice (the egg would have helped if I wasn't making it vegan). I pan fried it with just a touch of olive oil. Turning them is very difficult because they want to mush up. Next time I will bake them. The taste is pretty good. However, I wouldn't call it a burger, because it's not. Like another commenter of the recipe said, it's a black bean patty. But I like it enough to make it again with some more slight changes. It's a nice change when I am having beans so often.

Banana-Quinoa Muffins (Wheat Free)

It's a good base, but I will be playing around with it to make it better. I followed the recipe except for I didn't have baking soda so I subbed an additional 2 1/2 tsp of baking powder. I also used Bob's Red Mill All Purpose Gluten Free Flour because I didn't have quinoa flour. I also think my bananas should have been more ripe, I may have used them a couple of days too early. Biggest thing is that these do not need to cook for that long!!! 12 minutes was all mine needed. The flavor was not very sweet at all. I think the addition of cinnamon and other banana bread type spices may make these better. Also, maybe an additional banana. I also think that this is too much salt, next time I will use half of what it calls for. But not too bad for a base. I like that there is no oil. I may try playing with adding rice protein to make it more of a breakfast meal. I would love any of your suggestions.

Gluten Free, Dairy Free, Peanut Butter Cookies

Love these!!! I needed something gluten and dairy free. These fit the bill perfect. I used Maranatha no stir crunchy peanut butter. I used 1/2 c brown sugar and 1/2 c white sugar. I also used 1/4 c egg white substitute and 1 tsp olive oil in place of the egg. I baked them for 10 minutes till they were just getting browned. When they first come out they seem almost liquid, but after just setting on the sheet for 10-15 min they were just like regular cookies. I ate six of them! These are great!

Lemon Cream Pasta with Chicken

We really enjoyed this! It has a fresh lemon taste without too much cream. Made it as written for the most part. Didn't have heavy cream so used 3/4 C milk and 1/4 C butter (will work on decreasing this when I make it again). Used just over 1/8 C lemon juice in pasta (glad I did, afraid that 1/4 C would have been too much). Used 2 frozen chicken breasts that I cooked in a pan with a drizzle of olive oil and the ingredients in the recipe instead of baking. I used Ancient Harvest gluten free Quinua pasta. It was great! It didn't take the full time for the water to be soaked in. After stirring in the chicken, the pasta started to break apart, but it wasn't mushy at all. My husband even said he would eat this again (which says a lot!!!) Thanks so much!

Black Bean Brownies

Interesting texture, probably from the eggs? I didn't add the baking powder the first time, but will next time I make them. Don't expect these to have the texture of brownies as written, it just isn't the same. We couldn't taste any of the black beans. Make sure to get a can of black beans with NO SALT OR SPICES. I will make these again. They are good for what they are. I will try with the baking powder next time. Also, may try with the applesauce to replace oil. I did use egg white replacement instead of the eggs, but that's the only change I made this first time.

Slow Cooker Chicken Taco Soup

Although I like this OK, I found I didn't love it. It seems to be missing something, but I am not sure what. I may play with it a little more to see if I can get it just right for me, or I may merge it with the Slow Cooker Chicken Tortilla Soup recipe that is on this site. I did really like all the beans in this recipe. Maybe I didn't use the right taco seasoning. Next time I may make the taco seasoning recipe that the original author suggested even though I bought a really flavorful mix.

Slow-Cooker Chicken Tortilla Soup

Really like this soup. It freezes well and tastes great. Made a couple of changes. Used chicken broth instead of water and added black beans. I serve with extra sharp cheddar cheese and a spoonful of plain greek yogurt (trust me, it's really good and an excellent substitute for sour cream).

Roast Sticky Chicken-Rotisserie Style

The whole family loves this one! My teenage sons ask for it all the time. Whenever chickens go on sale I buy as many as can fit in my fridge and I prepare them as instructed before cooking and stick in a ziplock bag and freeze them. I thaw one in the fridge about a day or two before cooking and dinner is a breeze!

Oatmeal Apple Muffins

Tried these at my mother's. They are great! She made the following changes: Instead of half & half she used Silk French Vanilla Creamer. She subbed turbinado raw sugar. Instead of flour she used Bob's Red Mill Spice Apple Bran Muffin Mix. Measured out 1 cup of chopped apples and used pecans instead of walnuts. Then after they cooked she also spread 1/2 tsp of honey on the top of each warm muffin. Absolutely amazing!

Chocolate Sheet Cake III

I love this cake! We have made it with cinnamon, with 1/2 the cinnamon and without cinnamon. Hubby likes no cinnamon, I like it with 1/2 the cinnamon. This is a great rich, moist, chocolate cake.

Pizza Crust I

Good crust, but it lost a star for not getting brown when done. We also made 2 pizzas out of this instead of one. Will use again, but may also keep looking for that "perfect" recipe.
