Chicken Broth

I omitted ALL of the salt, since that much isn't healthy and I let everyone salt their own. Otherwise, the flavors were wonderful. Marked it as 3 stars due to the extremely unhealthy salt content--1 tbsp. would have been more than enough for my entire crockpot, let alone 7 (since I halved the recipe).

Frosted Molasses Bars

These were so good! I had to double the amount of coffee in the frosting in order to make it spreadable. These are great with coffee!

Spanish Brown Rice

We missed the cilantro from our normal recipe, but didn't miss the sodium content! I used thick and chunky salsa and added some extra onions (what Spanish rice doesn't have onions?). Used a fresh Roma tomato instead of the cup of diced tomatoes. My rice was done right at the 45 minute mark. The family said they would enjoy it more if it was white rice, but personally, I liked the brown. Next time I'll add some cilantro for personal family preference.

Catchy Coleslaw

It was too sweet for us...way, way to sweet! Cut the sugar in half and it's perfect. I used all green cabbage as that is what I had on hand. I wouldn't let it sit for any more than an hour--it started to lose its crunch. Will make again....thanks!

Tangy Ranch Apple Slaw

This didn't do anything for us at all. Between the onion and the ranch dressing mix the only thing we could taste was salty onion. Skip the ranch and possibly the onion, and just mix some cider vinegar and black pepper to taste. I really wanted to like this and taste the apple...but all we tasted was crunchy salted onion.

In reading all of the reviews beforehand, I thought that I had this recipe down pat. 1/2 of the sugar, use everclear, let steep for 2 weeks with lemon peels, 1 week with simple syrup then freeze. I should have done 3/4 of the sugar for personal preference. I had to do 1 1/2s time the recipe as I was only able to buy everclear in 1.75L bottles. I have four lovely bottles of this in my freezer and more than enough taste testers to make me want to start on my next batch. Let me play with it at 3/4 sugar and rate again!

Swiss Scalloped Potatoes

This was OK, flat out OK. I was expecting more oomph, what with the bacon, Swiss, garlic, onion and broth, but it was lacking in flavor. I added a bit of milk and changed the method of cooking. Since it is 103 degrees today, I refused to turn on my oven. I combined the potatoes, cheese, bacon, onion, and garlic in a large bowl and seasoned with the salt and pepper. I sprayed my microwave safe casserole dish with non-stick spray and dumped the potatoes mixture in. I added the stock and a bit of milk and then dotted with butter. I microwaved on high for 5 minutes and gently stirred, repeating the process 3 times (for a cooking time of 15 minutes). I can't believe that half of the family added more salt to their potatoes, but I admit, it needed more seasoning. Replace the salt with seasoned salt and add some garlic/onion powder. I will attempt this again once it cools down, but as it stands, I wasn't asked to make this again. We preferred the Microwave Scallop Potatoes on this site more than this one.

This was wonderful! I wasn't sure about the lemon juice, but it truly was different and refreshing. We did miss the onion and pepper in our normal recipe, but this was a change in a very good way!

Tangy Grilled Beef

Was extremely hesitant about using BBQ sauce on steak, and even more concerned with using tomato soup as it might be too sweet. The kids really enjoyed the steak, the adults were not as impressed. We all missed the usual method of cracked pepper, garlic and a bit of liquid smoke. Props for having a nice glaze on the beef, but this didn't do it for us.

Grilled Caribbean Free Range Chicken

The family wasn't overly impressed. The resounding response I heard was that it tasted like alcohol, and not in a good way. With all the powderful flavors of garlic, serrano, thyme and lime we were expecting more of a punch and less of an edible drink flavor. This isn't the chicken for us. I scaled for 1 pound of chicken and used boneless, skinless chicken breast strips.

Microwave Scalloped Potatoes

This was fabulous! I can't believe that I didn't have any fresh onion, so I substituted 1 tbsp of onion powder and added a huge scoop of fresh minced garlic. I also used seasoned salt instead of regular salt. I had three huge baking potatoes instead of four smaller potatoes, but it didn't make any difference once they were sliced up. My potatoes were done in exactly 15 minutes. Recieved 8 thumbs up...10 thumbs up once I sprinkled a bit of cheese over my 7 year olds plate. This is definitely a keeper!!!!

Easy Taco Skillet

It was easy, and the kids enjoyed it. When I do this again, I would add a bit more onion, some bell pepper and garlic while the meat is cooking. It's a good base to start from, maybe some green chiles, corn, olives? Versatile and easy to adapt to what you have on hand. Exactly as written...it's begging to be spiced up.

So delicious! I used bread and butter pickles as that is what I had and green onion as I like the milder taste. I made it with all egg whites--ate it ALL for breakfast by myself. Delish!

Use fresh grapefruit juice...it makes all of the difference. I used lime twisted gin as that is what I had. No matter--it was fabulous!!!!!!!

It was nice...a little too sweet for me and the triple sec overpowered everything. If I made it again, I would definitely decrease the triple sec--maybe use add'l fresh squeezed lime juice. Use freshly squeezed pink grapefruit juice--it really ramps up the 'fresh' flavor!

Red Velvet Cake I

I followed the other suggestions of 2 cups of sugar, 1 cup of oil, and putting the food coloring (1 bottle) in the buttermilk and doubling the cocoa powder. I used 2 8 inch heart shaped pans and baked for 30 minutes. My cakes were perfect--moist and oh so yummy! I frosted it with cream cheese frosting (1 pkg cream cheese, 1.5 cups powdered sugar, 2 tbsp milk and 1 tsp vanilla). I split the two cakes and made a four layer. The frosting was just enough for a thin coat between each layer and to frost. This is a KEEPER! YUM!
