Pompous Mexican

Not my favorite. Didn't enjoy the combo of gin and beer, though I enjoy the two separate. I think tequila might work better.

Red Velvet Cake I

I followed the other suggestions of 2 cups of sugar, 1 cup of oil, and putting the food coloring (1 bottle) in the buttermilk and doubling the cocoa powder. I used 2 8 inch heart shaped pans and baked for 30 minutes. My cakes were perfect--moist and oh so yummy! I frosted it with cream cheese frosting (1 pkg cream cheese, 1.5 cups powdered sugar, 2 tbsp milk and 1 tsp vanilla). I split the two cakes and made a four layer. The frosting was just enough for a thin coat between each layer and to frost. This is a KEEPER! YUM!

Horseradish Beets (Chrin)

Very nice! I didn't want a paste, so I cut the beets in to matchstick pieces and added a dash of pepper. SO GOOD!

Whiskey Mojo Marinade

We really liked this marinade! The whiskey mixed with the fruit juices was almost a margarita marinade...greatly enjoyed. I added more garlic and an extra dash of cumin, just because. Be careful and watch chicken closely...between the sugars in the juices and the alcohol your food will burn easily!

Smoker Sauce

I was unsure about the mixture of barbeque sauce, salsa and soy, but it worked really well! I cut back on the soy, but I should have used the whole thing. I used mild salsa, but this would be great using hot sauce and honey barbeque sauce for a sweet/hot kick. Will be using this sauce again! Thanks!

Steamed Garlic Prawns Chinese-Style

These were a nice change of pace. The family definitely prefers grilled shrimp over steamed shrimp...I would use the marinade but grill them after letting them rest a while. Loved the addition of the brandy!

Spicy and Sweet Spinach

Didn't like the raisins and had to pick them out before I could finish my bowl. Cut way back on the red pepper as the kids wouldn't eat it otherwise. I used 1/2 spinach, 1/2 beet greens. Excellent, thanks!

Raspberry Marinade

This was wonderful! I used half raspberry habanero, half cherry preserves. Used apple cider vinegar instead. I reduced the marinade and kept brushing it on the chicken as it was grilling. Goes in the keeper box. Thanks!

Vegetable Fried Rice

Family was thrown off by the sugar and the lime, personally, I love lime so it didn't bug me. This rice is sweeter than I normally make it, given the teriyaki and added sugar. If I do this again, those would be omitted/replaced with regular soy sauce. Left out the peas as that is one of the few veggies we won't touch. Thanks for a decent recipe!

Mommy's Lemonade (Margaritas)

Limey, luscious, sweet but still tart and NOT FROZEN! This is perfect--I didn't add salt or extra lime but some of my guests did (also scaled back the water. Next time I will turbo charge the flavor--omit the water and use light beer. To make it sweeter, substitute the water for lemon lime soda.

Johnsonville Italian Sausage Rigatoni

This was definitely a nice change of pace. Instead of canned sauce, I used homemade tomato sauce. I think the recipe calls for more pasta than is needed. Had green bell peppers on hand so I used those instead of red. It will be added to our rotation of dishes, as it was a really nice 'make ahead' meal.

I didn't bother with the salting. I had a full 28oz can of sauce, so I used it. We enjoyed this very much! Wished for more feta, but that's ok. I skipped the broiler as my 12 year old was baking and I didn't want her fooling with it.

Chux Beef Tips

I did this in the crockpot, so I only added 1 cup of water plus the cup of wine. Hooray for a no 'cream of yuck' soup recipe! I wanted our sauce thick (that doesn't happen in the crockpot) and I added a nice flour/cornstarch/butter mixture over medium heat, and then put it back in the crockpot to keep warm and get the starch taste out. I also added about 6 ounces of mushrooms, just because I had them. Only used 2 tbsp each of worchestershire sauce and soy sauce. Omitted salt and only used 3/4 tsp total of pepper. I figured with the gravy mixture there would be salt enough without a full 1/2 cup of sodium filled soy and worchestershire. As for wine...I used a nice tempranillo. Definitely something we will enjoy around here more often!

Garlic Mushroom Pasta

We LOVED this. I guesstimated on the garlic as I buy it pre-minced in large jars. Added a few extra mushrooms--next time a whole 8oz package would definitely be good. I was worried about the egg fully cooking, but it did (only added one). This will definitely go into our rotation!

Ricotta Eggplant Rolls

This was SO GOOD!!!!!!!!!! I used 3 medium sized eggplant with the stated amount of everything else (bread crumbs, eggs, and filling). I cheated and used 2 28 oz cans of Garlic & Herb prepared pasta sauce. If you don't want your cheese to ooze out the sides then leave the mozzarella out of the ricotta mixture and sprinkle it over the top of the eggplant rolls. I added more garlic and onion powder to my ricotta, just because. It was phenomenal!!! Thanks!

Easy Sausage Pizza by Johnsonville®

This was fabulous! I did not prebake my crust; I just used a thin crust pizza and precooked the sausage, then sliced into rounds. Added some mushrooms and onions just because they were there. 10 minutes on the middle rack and 2 on the bottom rack. FABULOUS!

Roast Sticky Chicken-Rotisserie Style

The only thing I did was use a 4.5lb bird and used Italian seasoning blend in place of the thyme. I cut back on the cayenne since the kids wouldn't enjoy the spice. I roasted for 2 hours at 325 then bumped it up to 375 for an additional 20 minutes. I roasted some potatoes and onions in the same pan and sprinkled the seasoning on those as well. Divinity!
