Creamy Fettuccine Alfredo with Broccoli

Props for ease of preparation! I left the sauce on the side since we like different levels of 'sauciness'. I added some onion and some garlic, just because I had them. Kids enjoyed it and even the meat loving hubby had seconds!

Broccoli Spaghetti Soup

Needed some serious ramping up. For those who like simple food, then this is your soup. For those of use who love the kapow of flavor....look elsewhere. Even with adding onion and subbing chicken broth for the water it was still pretty 'meh'. Great for the day before payday though!

Taco Soup VII

Points added for simplicity and pantry fixings. Points removed for the directions and the ingredients not matching. Which is it? Taco seasoning, or onion soup mix? No liquid? It's so thick that pasta sauce has more liquid in it. I made the following changes: added fresh onion and cooked with meat. Used taco seasoning since it IS taco soup and not a nacho type topping. Added 2 cans of water from the diced tomato can and used diced tomatoes with green chiles instead of plain tomatoes. This recipe as written--great for nachos or as a dip, NOT soup. My version of this recipe? A quick family friendly stew.

Taco Soup VII

Where to begin with this recipe? Points added for simplicity and pantry fixings. Points removed for the directions and the ingredients not matching. Which is it? Taco seasoning, or onion soup mix? No liquid? How is this considered a soup? It's so thick that pasta sauce has more liquid in it. To remedy this entire recipe to make it edible I made the following changes: added fresh onion and cooked with meat. Used taco seasoning since it IS taco soup and not a nacho type topping. Added 2 cans of water from the diced tomato can and used diced tomatoes with green chiles instead of plain tomatoes. This recipe as written--great for nachos or as a dip, NOT soup. My version of this recipe? A quick family friendly stew. I'm going to make my changes and resubmit this recipe for publication. Photo is of MY version, not as the recipe states.

Hearty Meat Sauce

Added diced onion and garlic with the meat as I browned it. For my personal bowl I added crushed red pepper flakes. Subbed the ground beef for Johnsonville Mild Italian sausage and the flavor really popped!

Slow Cooker Roast

Solid 4 star recipe. The water amount wasn't specified so I used an entire can. I had to compensate with the liquid after cooking. I didn't use the entire contents of the onion soup mix....nearly 3/4. The cooking time is WAY OFF. I put my roast into the crockpot at 10am on low. I pulled it out at 3 and it was nicely cooked. Anything more would have been overcooked and dry. I pulled all of the moisture out, made a roux, and thickened the sauce to a more gravy like consistency. I also added spices before I seared my meat and 3 celery ribs, just because they were sad and begging to be used. I absolutely had NO complaints on the pot roast but I admit to doing some serious off recipe (not ingredient) additions. I made a side of sauteed mushrooms with red wine and pear balsamic vinegar which was a HUGE hit to accompany the pot roast.

Broiled Salisbury Steaks

Absolutely FANTASTIC! I used Smoky Spanish Paprika, which gave off a lovely bacon aroma and taste. I did 5 minutes on the first side and 8 minutes on the second side. I paired it with my own recipe of mushrooms in a red wine and pear balsamic reduction. Added some garlic herbed mashed potatoes and everyone was in heaven! Thanks for a fabulous dish!

Favorite Apple Galette

Taste was great with some changes. The original poster must have used the smallest apples on earth to fill this galette. I used 3 normal sized Granny Smith and it was overflowing with fruit. I skipped the coarse sugar sprinkle as all I had was Turbinado....and it wouldn't stick to the dough. Baked for 20 minutes at 450, then reduced the heat to 375 and baked another 20. The top was a bit darker than I would have liked...you could probably have reduced the 450 cooking time to 15 minutes. Tasty though!

Caesar Salad Bites

Preparation was easy. Added croutons because...what Caesar Salad doesn't have croutons? Besides, I had to use them up. If you want to make this a really solid appetizer/side then use a good Caesar dressing, or better yet, make it yourself. As written, it could have used some serious jazzing up with fresh lemon and black pepper. Glad I added the croutons, they were missing a huge crunch. Would I make these again? A solid maybe.

Stuffed Cinnamon Rolls

Easy, if messy to assemble. If you choose, I would actually chop the apple slices from the filling smaller. Some of mine were too big to fit into the pocket I pushed into the cinnamon roll. There's no 'pretty' way to seal the cinnamon rolls together without ruining the look of the cinnamon roll. I ended up simply placing the top cinnamon roll on the bottom and hoping for the best. Family had no complaints! Assembled the night before and made for a Monday morning breakfast. Happy Family!

Mom's Mexican Chicken (Jennifer Sue Jacks Henley)

Extremely similar to the enchiladas I make with the exception of the jalapeno. It was a welcome addition to me! I roasted my jalapeno beforehand, since I was making salsa anyway, and it gave the casserole a nice smoky taste. I usually roll mine, but didn't since I followed the recipe. As a note: you don't HAVE to boil the chicken, you can use any type of cooked chicken you like: grilled, rotisserie, leftover chicken whatever...don't limit yourself to following the directions to boiling from scratch...you potentially lose a lot of flavor. Play with it and enjoy. I also foiled my casserole (as this is what the recipe is) and baked it for 20 minutes, since we don't like dried out cheese...we prefer a more gooey cheesy texture.

Simple Bundt® Caramel Rolls

Do not be afraid by the liquid ratio! I was seriously scared, but after cooking, most of the liquid was absorbed. Definitely flip the cake over onto a plate over a sink...it will catch any dribbles that may be there. Served it for dessert and then warmed it for breakfast the next day. I hear NO complaints either time! Similar to monkey bread but less cinnamon, more caramel...which is fine by me!

I would have preferred less a bit less cilantro and a bit more lime juice, but hey, it's great as written! If anyone is spice shy, be prepared...fabulous for those who like spice, those with milder tendencies might want to omit some of the peppers.

White Fiber Mini Shells with Cherry Tomatoes, Basil and Parmigiano-Reggiano Cheese

Very nice and simple dish! Couldn't find the White Fiber Mini Shells, so I used regular Barilla Shells. Instead of regular olive oil I used a mixture of olive oil and garlic infused olive oil. Fabulous!

Copycat Chipotle® Cilantro-Lime Brown Rice

NOM NOM! I didn't measure the garlic, I just added a good spoonful--probably closer to a tbsp. This recipe is fabulous, but it makes a LOT...way more than 4 servings. Unless you are planning on eating nothing but rice for dinner this could easily feed 8 as a side or as a burrito filler instead of the stated four people. To give it extra zing, zest the lime and add that as well. Be careful though, as a little goes a long way. It was perfect with chicken enchiladas. This is going in my keeper box....it's just too bad that only 1/2 of my family likes cilantro and lime!

We loved it! New summer favorite drink! We ended up finding Ginger Beer at Total Wine & more, Fry's didn't have it. Don't try and substitute it with ginger ale; ginger ale and ginger beer are separate things.
