Guinness® Bread

Reviewed: Mar. 17, 2010
I have had really good beer bread...but this tops them all and what's even better is that this recipe was so easy I had no problem, whatsoever, following it. I did use quick-cooking steel cut Irish oats in mine and I really like the rustic texture they gave this bread. This bread is sweet, it's savory...altogether delicious...thanks for a great recipe!

Easy Baked Stuffed Lobster Tails

Reviewed: Apr. 14, 2012
These were so easy and so decadent to serve for a simple supper. My neighbor thought they took a ton of work...WRONG! I did add garlic to the stuffing, other than that, I followed the recipe but scaled it back to serve 3. Thank you for a new way to prepare lobster!

Mexican Pintos with Cactus

Reviewed: Jul. 9, 2010
Ok, I'm not exactly sure why this recipe only has a 3 1/2 star rating because it is fantastic! I didn't have time to do dried beans in the crockpot so I used a can of white kidney beans (I had them on hand) and I used jarred cactus. I had never had cactus before and didn't know what to expect. I can tell you that I will use this recipe as a staple side dish in my home from now on...it's delicious!

Spumoni Chocolate Chip Cookies

Reviewed: Dec. 14, 2009
I just made these again, three years later than the first time I made this recipe. I did a few tweaks. You can view the step-by-step photos at www.bakedlava.com I added 2 packages of pudding mix, a full cup of chopped pistachios and a 10-ounce jar of cherries. It's funny, but the first time I made these, they did have an odd, greenish tint to them...with 2 boxes of pudding mix, that tint was just not there. This is just a great spin off a chocolate chip cookie recipe and it is going on my Christmas platters this year. I highly recommend this recipe, either as is, or with my tweaks...it is tasty either way you go!

Easy Portuguese Cookies

Reviewed: Apr. 15, 2010
These are a not-too-sweet cake like cookie and I really enjoyed them. I had to use 3 tablespoons of half and half because my dough was a little dry, but that could be a lot of different things other than how the recipe was written. Very good!! I imagine these would be fantastic with coffee and I'll be trying that out in the morning!

Tomato Soup Cake III

Reviewed: Oct. 19, 2010
The taste is phenominal. I wouldn't have thought of ever using tomato soup in a cake, but the recipe sounded so bizarre I had to give it a whirl and I'm glad I did. The only thing I did different was to cut the recipe in half as a 9 x 13 pan wouldn't fit in my RV oven. I am giving this a 4 star review because the texture is crumbly. Thanks for a great tasting recipe!

Nana's Southern Coleslaw

Reviewed: May 24, 2012
You're right...this is pretty dang close to KFC's coleslaw...which is the ONLY coleslaw that I truly like. I didn't chop up the bagged cabbage/carrot mixture because I don't mind it chunkier. Great recipe, I'll be using this as my go-to from now on!

Ratatouille

Reviewed: Nov. 10, 2011
I have one reason and one reason only for giving this recipe 5 stars. You have done the impossible and created a recipe that #1: I actually can say that I enjoyed zucchini in (I am a zuke hater!) and #2: utilizes eggplant in a way that tastes good. I wasn't going to say that I hate eggplant, I just hadn't found any way that I liked until this recipe. I gambled on this and figured it was a 50/50 shot, my husband & I were either going to really like it or really hate it and it's a good feeling to say that we really liked it. I love the flavors of all the vegetables together. I liked how all of the veg on the upper layers leaked down and flavored the zukes and eggplant. This would be an awesome vegetarian main dish if one were to use sliced portabellos for the mushroom layer. I used chanterelle mushrooms because they are in season here and my neighbor is kind enough to give them to me. Thanks for a delicious recipe!

This was pretty good. I do think that it may need just a pinch of salt in the dressing, though. Thanks for a great recipe.

Soy and Honey Pork Chops

Reviewed: Jun. 16, 2011
I'm going to rate the base of this recipe as I never follow one to the letter. I did add 2 ingredients that made this completely over the top. I added 1 teaspoon of lime juice and 1 teaspoon of sesame oil and it made it fantastic. I think this is a great recipe for a BBQ beginner. Thanks for submitting it, we all enjoyed it here and my husband said I can definately make this one again.

Orange Juice Jelly

Reviewed: Sep. 17, 2010
This was my venture into jelly making and I just want to thank you for making it really enjoyable with this recipe! The jars are cooling off as I type. I tasted the jelly before putting in the jars and it tasted fantastic! I read one of the reviews where it said that it tastes like sunshine in a jar and I'll definately second that...thanks for a super great recipe, Rachel...I'll be making more of this!!

Butternut Squash Kugel I

Reviewed: Oct. 7, 2011
This was a super good recipe! I didn't use frozen squash, I roasted a whole butternut in the oven and used that instead. I used whole milk instead of non-dairy creamer because non-dairy creamer just freaks me out...I wonder if it's really a food or something concocted in a lab somewhere. I also swapped brown sugar for the white sugar. Other than that, the recipe remained the same and I and my other dinner party guests loved this recipe. Thanks for submitting it!

Swedish Chanterelle Mushroom Pate

Reviewed: Oct. 12, 2010
I was fortunate enough to have a very kind neighbor who gave me a couple of pounds of fresh chantrelles. I thought this recipe looked intriguing and I wanted to try it. I read the reviews and, honestly, I've never heard of either dried or frozen chantrelles, and I can't imagine either would be good. This is a recipe for the fresh ones and this recipe didn't disappoint, at all! This is fantastically delicious and I'm so glad you submitted it! If I could give more than 5 stars, I would!! Thanks!

Ukrainian Apple Cake (Yabluchnyk)

Reviewed: Feb. 24, 2010
This was a very good, very rich recipe. I am really amazed at how little work it takes to actually make this. I made it with Red Delicious apples but I think the next time I make it, I'll use granny smith. Thanks for a great recipe.
