Orange Juice Jelly

This was my venture into jelly making and I just want to thank you for making it really enjoyable with this recipe! The jars are cooling off as I type. I tasted the jelly before putting in the jars and it tasted fantastic! I read one of the reviews where it said that it tastes like sunshine in a jar and I'll definately second that...thanks for a super great recipe, Rachel...I'll be making more of this!!

Carne Con Chilies

I am giving this recipe 5 stars because I read the reviews and actually made this with a bit of trepidation. I wasn't sure what to expect. I used tomatillos and jalapenos from my garden, but when I went to go get a tomato, it just wasn't quite ripe enough, so I used part of a can of diced, fire roasted tomatoes instead. I also threw in a tiny orange pepper that I pillaged from the garden, just for variety. I really wasn't sure what to expect. I gave my husband the first plate with a heated flour tortilla and he DEVOURED it! So I took a nibble and this is so freaking good!!! Thanks for submitting this most awesome recipe!

Mexican Pintos with Cactus

Ok, I'm not exactly sure why this recipe only has a 3 1/2 star rating because it is fantastic! I didn't have time to do dried beans in the crockpot so I used a can of white kidney beans (I had them on hand) and I used jarred cactus. I had never had cactus before and didn't know what to expect. I can tell you that I will use this recipe as a staple side dish in my home from now on...it's delicious!

Simple Carnitas

Ken, you are an absolute genius when it comes to pork recipes! This is fantastic!! I used my crockpot and I used one huge orange and one lime like some of the reviews said. I crisped up the meat with olive oil in a skillet and topped with a homemade Colorado sauce. 'Nuff said...this recipe is a keeper!

Ethiopian Spiced Cottage Cheese

What a unique way to use cottage cheese. I chose this recipe as part of my Ethiopian dinner because my husband has throat cancer and cottage cheese is one of the things he can eat with no problems. I love the citrusy-earthy flavor of the cardamom in this dish. I'll be making this again...thanks for a wonderful recipe!

These are fantastic...I used the toothpick around the edge idea and the first one didn't work out so good but the rest worked great! I made an Caramel-Disaronno Apple Filling and these were delicious as a dessert for my German dinner!

These are fantastic! I didn't have 1/2 a cup of white vinegar so I just used red wine vinegar and it turned out fantastic...definately on my to-do list again!! Thanks for a superb recipe!!

Singapore Chicken Rice

This is fantastic, I had to make parts of it in advance, so I crisped up the chicken in a mix of canola and sesame oil...and I only used 2 breasts and 2 thighs or it would have been too much chicken for me...I will definately recommend this recipe and I'll make it again! Thanks for a great recipe!!

This is a fantastic recipe that I'll be making again! I cut the recipe in half as there were only 2 of us...I used Triple Sec instead of Grand Marnier, as that was what I had on hand. My husband gave it 4 out of 5 stars which is a super good rating from him! Thanks for a great recipe!

Easy Portuguese Cookies

These are a not-too-sweet cake like cookie and I really enjoyed them. I had to use 3 tablespoons of half and half because my dough was a little dry, but that could be a lot of different things other than how the recipe was written. Very good!! I imagine these would be fantastic with coffee and I'll be trying that out in the morning!

Argentinean Potato Salad

This is a fantastic, different version of potato salad! I used 1 1/2 teaspoons of fresh dill instead of the dried but that is the only sub. The green olives give this recipe an added kick and work deliciously! Whodathunk to add a can of Veg-All to potato salad? Not me, but it works out great! I"ll definately be making this recipe again...thanks!
