Crunchy Country Chicken with Creamy Gravy

Pumpkin French Toast Bake

This was a really great addition to a brunch menu. It was perfectly spiced and not too sweet, but just sweet enough to not need syrup. The crumb topping is an extra special touch. I found I liked it best with just a dollop of fresh whipped cream to complement the spicy pumpkin flavor. I didn't have Texas toast and substituted a loaf of regular sandwich bread, which when cubed equaled about 8 cups. I also took the crusts off first. The only minor issue was with mixing everything in the baking dish - that caused it to stick to the dish. I would recommend stirring the pumpkin mixture in a large bowl and adding the bread cubes to the bowl to mix, then pouring it all in the baking pan.

Homemade Butter

I have been finding a lot of great home made alternatives on here for products I would normally purchase store bought, and this one hits in the top five of my favorites~ I never would have even thought of doing it if not for the 'recipe' here. One of the many reasons I love AR. It was so easy. I just used my f.p. and then pressed the butter into a cheesecloth lined sieve to extract the buttermilk (which was a pleasant bonus!). It may or may not be economical depending on the cost of your cream versus a pound of butter, but the taste alone is worth it!

Butterscotch Gingerbread Cookies

Wonderful, full flavored cookie ~ chewy inside and crispy on the outside. One thing I would recommend though is reducing the butterscotch chips. I only put in the 8 oz I had left in the bag and it was more than enough. Any more, and the butterscotch flavor would be overpowering and the cookie most likely way too sweet.

Spaghetti Sauce Mix

This made the best spaghetti dinner ever. Rich and saucy with a very robust flavor. The best part ~ no puddle of tomato-y liquid pooling under the noodles. I made the recipe as written, but used slightly less water when it came to following the directions for making the sauce. This will be my go to recipe from now on.

Sweet Baked Onion Rings

I think these are just too much work for a so-so outcome. Definitely good for a baked ring as opposed to fried, but just not really worth it to me. The coating was really crispy, almost too crispy ~ making them hard to eat without tearing up your mouth, and I found the flavor lacking overall. The taste of the onions were lost beneath the coating.

Avon's Apple Pie Shortbread Cookies

Perfect cookie for a fall day with a hot cup of tea. I made a 'pumpkin pie' version using pumpkin butter and pumpkin pie spice. Fun variation on shortbread, Avon~thanks!

Lemon Chewy Crisps

Delightful cookies. Crisp and chewy as promised with wonderful lemon flavor. Best eaten quickly and not stored - I found they lost their crispness quite quickly and went very soft.

Kathleen’s Toasted Ravioli with Basil Cream Sauce

These were so good, Kathleen. I wanted kid friendly finger food for a family movie night, and my kids *loved* these. I knew they wouldn't go for the basil sauce, so I made a marinara instead. I will wait for an opportunity to make the basil cream as it sounds delicious. Easy, quick, fun, yummy and kid friendly - makes these a hit for us. Thanks for sharing your recipe.,

Glazed Apple Cookies

These are delicious cookies that were a hit with everyone. Lightly spiced, just a little crispy outside, with soft chewy centers. I followed the recipe exactly, but didn't try the frosting as I was out of butter - I used "gingerbread frosting for cookies" from this site instead which was a great match. Watch these carefully if you bake them at the suggested 400 degrees. Or, line your cookie sheet with parchment paper to prevent the bottoms from overbrowning. The only thing I would change next time I make these would be to use pecans instead of the walnuts.

Cindy's Beef Tips

The cooking method produced tender, flavorful meat. I found the sauce lacking in flavor though, so next time I would adjust the seasonings more to our liking. I would also at least double the meat as it wasn't nearly enough for the sauce, or for six servings.

Homemade Dishwasher Soap

This is fantastic. Worked just as well, if not better, than the commercial soaps. The ingredients are most of the same used for the home made laundry detergent, which is very handy. I used citric acid (1/4 cup) over the unsweetened lemonade though, as it's something I keep in the house anyway. Thanks for posting this, Molly! As grocery prices continue to go up, it's so nice to be able to cut costs in other areas.

Brown Rice and Black Bean Casserole

Terrific, easy, and pretty kid friendly. Great weeknight meal, especially if using left over chicken. When I'm cooking something like rice, I always make more than I need, then portion and freeze the extra. Makes it easier to put into something like this. The leftovers also made a great lunch the next day. The only thing I would do differently next time is use cheddar or a mexican cheese blend instead of swiss.

Chicken Enchiladas II

Great, kid friendly meal. The reason for the 3 stars - I followed the recipe to the letter and could barely fill 3 tortillas (and my tortillas were only 10 inch, not 12 inch). It's a good thing I was only feeding my two kids plus hubby and me. I'll make this again but be sure to double the amount of chicken.

Turkey Veggie Meatloaf Cups

Very flavorful and moist. Pretty kid friendly too, and a good way to get some extra veggies in. I didn't realize until too late I didn't have the couscous so I substituted a 1/4 cup of quinoa cooked first in 1/2 cup of water, which worked out well. Otherwise followed the recipe to the letter. I would not bake them in muffin tins next time though, as it was some mess to clean up. This would work well as a loaf or meatballs. The leftovers made great sandwiches the next day, which was a bonus.

Chicken Breasts Stuffed with Crabmeat

Simple and uncomplicated, yet producing an outcome with fantastic flavor. The only thing I would add is to be sure and gently pound the chicken breasts to an even thickness, if necessary, for even cooking.

Summer Berry Cheese Pie

This would get five stars for the final outcome, which is delicious and refreshing but, in my opinion, the directions could have been better written. Be sure to use a home made crust, as store bought ones just don't have the texture and flavor. This can be changed up easily depending on what fruit/berry combinations you use. I could not find nice strawberries, so I made a mango/blueberry version which was fantastic. Everyone loved this pie.

Savory Grilled Corn

The corn turned out great and was very delicious. However, I would recommend leaving out the parmesan cheese and saving it to sprinkle on at the table. It completely stuck to the foil, even though I greased the foil. I also wouldn't recommend grilling the corn for the length of time written. It only needs 15 minutes.

Triple the Ginger Cookies

I was really disappointed in the flavor and texture of this recipe. I followed just as written, but these had very little ginger flavor, which was an absolute surprise to me. The texture was nothing like a typical gingersnap either. The cookies were very soft. I'll stick to my 'tnt' ginger cookie recipe.
