Slow Cooker Mashed Potatoes

Reviewed: Dec. 26, 2011
I decided to try this recipe looking to ease the typical turkey dinner work load. As such, I prepped it the day before and kept refrigerated until time to start warming. I was a bit worried as the amount of cream cheese and sour cream seemed overwhelming and, fresh out of the cooking pot, they did make the potatoes very rich and 'saucy' (I didn't even need to use any of the cooking water), but the slow cooking process mellowed them just enough. They didn't seem to need the butter stirred in at the end, so I left it out. This recipe, along with a slow cooker stuffing, made my turkey dinner a breeze. Thank you!

Slow Cooker Stuffing

Reviewed: Dec. 26, 2011
In combination with a slow cooker mashed potato recipe from this site, this recipe made my turkey dinner seem like no work at all. I prepped the day before and kept refrigerated until time to cook. I used the keep warm setting on my slow cooker as it gets quite hot, and cooked for about 7 hours. The stuffing was moist, with nice crisp bits around the outside edges. Very flavorful as well! I made a few slight adjustments to the recipe - using 1/2 the butter and omitting the mushrooms. I only needed to use 3.5 cups of the broth. The mixture was as moist as I typically make my stuffing. I am so happy to be able to streamline a typically work intensive meal. Thanks so much!

Dried Cherry and Cranberry Sauce

Reviewed: Dec. 26, 2011
This is really a lovely recipe! The subtle layering of flavors and the perfect contrast between sweet and tart were heavenly. This will be replacing my nice, but boring old standard recipe. I followed to the letter however, must admit to using a black cherry/cranberry juice blend I found. My only, albeit slight, issue with this recipe is it was a tad 'loose' so I would reduce the juice accordingly next time to allow the sauce to gel a bit thicker. Thank you so much for sharing this gem!

Creamy Ranch Pork Chops and Rice

Reviewed: Dec. 18, 2011
Supremely easy and quick weeknight meal that pleased everyone. Just what a busy night called for. While I can't fathom using canned cream soup, I was appreciative of the idea, so thank you for that, Campbell's! I used a homemade version of cream soup which I make up in bulk and keep on hand in the freezer. I also used a home made ranch mix. The pork was tender and the sauce flavorful and creamy. Loved the 'ranch rice' as well.

Butterscotch Brownies in a Jar

Reviewed: Dec. 10, 2011
Unfortunately, the ingredients don't make for the prettiest presentation ever in a jar. The outcome is not bad ~ the brownies were a nice chewy texture and were not too sweet, but I agree with other reviewers - add 1/2 cup butterscotch chips to give not only an extra layer of color to the jar, but a punch of flavor & interest to the brownie (I would do a ratio of 1/2 cup nuts & 1/2 cup chips).

Jalapeno Bread II

Reviewed: Dec. 8, 2011
I followed this recipe save for using my Kitchen Aid mixer as I don't have a bread maker. I also used chopped pickled jalapenos. The cheese cubes blended and melted beautifully throughout the dough during kneading and combined with the jalapenos to create breathtaking flavor. Be sure to only use good quality, full fat cheese for best results. I am so in love with this bread recipe! Insanely delicious!

Beef Stew VI

Reviewed: Dec. 8, 2011
This is a classic recipe with classic good taste. I followed as written, using beef broth as I prefer to use bouillon as little as possible. Salt to taste. I also chose thyme over rosemary & added mushrooms, again personal preference. Generally, I like to dredge stew meat in flour and pepper before browning but really, this recipe doesn't need serious tinkering with at all.

Candy Cane Popcorn

Reviewed: Dec. 8, 2011
This is a great fun and delicious holiday treat for kids. I liked it too! Not too sweet either. One thing I would recommend is using a deep dutch oven to mix. I used my extra large mixing bowl which resulted in popcorn all over the counter. It gets your hands a little messy, but overall is very easy to whip up. I lightly crushed tiny peppermint pillow candies (about 2/3 of a cup) as I find canes are notoriously hard to crush evenly. I see this becoming an oft requested Christmas treat in my world!

Popcorn Seasoning

Reviewed: Dec. 7, 2011
This is really a delicious combination of seasonings. I sprayed just the lightest bit of canola oil on the popcorn with my Misto to help the seasoning coat the popcorn better. It's addicting!

Cranberry Hootycreeks

Reviewed: Dec. 2, 2011
I followed this recipe to the letter. The presentation makes this a great gift! I wanted to verify the outcome of the cookie, just to be sure, so I made a batch for myself, following the directions exactly as they would be written for the recipient. The cookies themselves are quite good, pleasantly crisp/chewy and very flavorful! Glad I finally tried this recipe.

Billy's Favorite Gingerbread Spiced Coffee Syrup

Reviewed: Nov. 26, 2011
Very spicy, and the submitter is right - so many good uses for this. It adds a lot of flavor to just about anything. I followed the recipe but used ground allspice as I had no berries. As it is so spicy and sweet, a little goes a long way.

Jan's Beer Sandwich Rolls

Reviewed: Nov. 18, 2011
These rolls rose up gorgeously and were delightfully chewy and flavorful. The only ingredient I left out was the malt powder. I used my kitchen aid as well. I will be making this recipe often.

Banana Oatmeal Cookies

Reviewed: Nov. 18, 2011
This recipe is one of the best uses of those ever present "Iamgettingsotiredofbananabread" over ripe bananas that I have come across lately. I followed the recipe save for using nutmeg in place of the cloves. The cookies were crispy outside, tender, moist and soft on the inside and very banana-y ~ black bananas yielded just the best flavor.

Chicken Enchilada Slow Cooker Soup

Reviewed: Nov. 15, 2011
Delicious soup, easy and fuss free. I increased the amount of broth and adjusted the type of ingredients to lower the sodium, such as home canned tomatoes and broth, and frozen corn, although that's just personal preference. Thanks for the recipe, it was a hit with the whole family. Served with cornbread on the side and the suggested toppings of green onions and cheese, plus a little sour cream.

This couldn't have been easier, or more fresh tasting and delicious. Just perfect, as far as I'm concerned.
