Homemade Vanilla Extract

I followed the recipe and after 5 months I am disappointed in the results so far. Fairly weak flavor, and that's with using extract grade beans. The recipe doesn't even specify to use them and I expect the results would be even more disappointing using regular grade beans. I agree with those who assert that more beans are needed for this to work. I just now added 5 more beans and we'll see what happens.

Chicken and Corn Chili

Such a simple, bare bones recipe yet very flavorful! This is one I'll put right into my 'kids night to cook' folder as it would be dead easy for them to pull off. Yay! I followed the recipe save for using frozen corn and a can of diced green chilies for the Mexican style corn which isn't an item found on my grocery store shelf. I would recommend leaving the salt out until you do a taste test at the end as it likely will end up too salty for you otherwise.

Irish Chicken and Dumplings

This is delicious comfort food at it's finest. Absolutely though, take the hint from reviewer DHILLY and reduce the dumpling mixture by about half. I used a home made chicken soup mix and biscuit mix for this recipe, both of which can be found on this site. So much better to remove the msg and other additives by doing that.

Southwest Chicken Quesadillas

Very few ingredients, and yet so flavorful! A quick and easy way to get dinner on the table when you're short on time, and a good way to use up a bit of leftover chicken. These also make a great leftover lunch the next day (if you make a double batch!) Love the cooking method too, as it's no-mess. Make these with a corn/flour blend tortilla for best overall flavor.

CRISCO® Chicken Enchiladas

These were excellent. The sauce (with half or less of the salt called for) and filling are both really good. I think putting the entire amount of sauce on top is overkill, though. I only used about half of it so as to retain some crisp edges on the tortillas. The centers were all warm and melty with the filling and cheese, while the edges were pleasantly crisp and just a bit chewy. Mmmm, mmm, good.

Thick Chocolate Pudding

This recipe perfectly replaces a 3.4 ounce box of Jello cook and serve pudding (which also makes 4 1/2 cup servings), with the added bonus that it cooks up much more quickly. My ten year old son loves chocolate pudding to death and I love that he can make this himself with what's in the pantry, as we do away with the additives that come with the commercial version. This recipe has lots of potential for use in the 'home made is best' home cook's kitchen!

Absolutely Fabulous Greek/House Dressing

This is classic house dressing with a very 'bright' and tangy flavor. The herb mix is perfect and the touch of dijon gives it a bit of bite. I took the hint from the two most popular reviews, both scaling the recipe down and emulsifying it. My only recommendation would be to use a good quality extra virgin olive oil, and make sure it's one whose flavor you know you like.

Sesame Noodle Salad

Lively flavor! Very much enjoyed this simple but flavorful salad. Easy to dress up or down, depending on whether you want it for a main, side, or light lunch. I could see adding sliced cooked chicken to this, or something along those lines. Add in some snap peas or broccoli - I can think of many possibilities!

Tex Mex Black Bean Dip

Good, but needed a bit of livening up. I would add a touch of salt, use a medium picante rather than mild and add a bit of the lime zest. Best served warm for sure, but easy to heat up gently in the microwave if needed. This is a versatile dip that also makes a great filling for tortillas or taco shells.

Kelly's Butterscotch Pudding

This recipe 'may' get the butterscotch flavor using DARK brown sugar. As is, with brown sugar, it tastes like extremely sweet and mostly flavorless pudding. It has a nice texture and consistency, though (I used 2% milk).

Avon's End of Summer Sunday Morning Peach Coffee Cake

Avon, this recipe is perfection. Light, flavorful, moist, and has lots of added nutrition (I love the interest and light crunch the steel cut oats add). I'm impressed. I only just found your recipe today and it's right up my alley, so I wasted no time in getting into the kitchen with it. I remembered too late that I didn't have my small baking pan, so made it into muffins instead. It filled 13 cups perfectly, and I baked them at the suggested temperature for 25 minutes. I thought I had better halve the crumb topping for the muffins, but it's so good, I will be sure to make it a cake next time to enjoy fully that wonderful topping. Thanks so much for developing and sharing this recipe. Just be sure and let me know about the next one, please!

Overnight Coconut Pecan Steel Cut Oats

Really good! I added some vanilla yogurt instead of extra milk which was the perfect topping, for me. I like how chewy and crisp the oats are when prepared this way, and the coconut/pecan combination is delicious. I wasn't sure at first how I would like a cold bowl of oats, but it didn't take long to decide I actually prefer them cold. Thanks for changing up the oatmeal routine, Linda :)

Honey Almond Oatmeal Bath Bar Soap:

I followed this recipe as written out. I had an issue with needing more water than called for, more like 1/2 cup which probably made the bars a bit on the soft side (the recipe doesn't specify the size of bars to use, which may have caused the issue, so it would really be helpful to know). Otherwise it came together quite easily, though it requires a fair bit of elbow grease to shred the soap and mix the ingredients together. One aspect of the recipe that I would change next time would be processing the oatmeal first (and possibly reducing the amount). I found the large flakes in the soap end up mostly going down the drain and are messy. Grinding them up first might alleviate that but still give the benefit. I used an old 9x13 baking pan which made 18 small bars, but in retrospect I think I would use a smaller pan to make thicker bars. To sum up though, the soap is gentle and makes your skin feel great.

Raisins and Rice Pudding

This pudding was great. Creamy and flavorful. I used coconut milk as I needed it to be dairy free. I think the coconut milk contributed to the flavor and creaminess. I still added in the cinnamon along with a dash of vanilla extract as well.

Whole Wheat Honey Bread

I followed this recipe except for using butter for the shortening. Some whole wheat recipes can be either super dry and dense or just too light and insubstantial ~ this one struck a perfect balance. I found it to be moist, tender and light but with just the right balance of heartiness. The honey gives it just a touch of sweetness and great color. It's great toasted and for sandwiches.

Groovy Green Smoothie

You really can't taste the spinach in this! Who knew? I had to make a few fruit subs, such as kiwi for grapes and strawberries for the apple. I think I would use a frozen banana to make it a little more refreshing, but that's about it. Fantastic.

Butterscotch Oatmeal

Super sweet, even for this 'sweet tooth'. I would suggest starting with half the sugar. Also, boiling as directed will curdle the egg. The mixture only needs to be heated (on medium low heat) until thickened, then add the oats.

Honey Wheat Sandwich Rolls

Excellent recipe. I changed nothing and nothing needs changing! Flavorful, soft, tender, chewy. Just delicious. These rolls were still fresh tasting the next day as well.
